    Default Ginger Vinegar

    I accidentally made ginger vinegar! I saw a mother forming in one of my jars of ginger bug that I left unintended, so I looked it up. It's a thing! Here is a website that tells about it. She did pretty much the same thing as me. Mine looks like hers. I haven't tasted mine yet. I wanted to be sure of what it was.

    It smells heavenly. Still haven't tasted it yet. I think it needs to age more.

    Like Peckish said, a "Mother" is a kind of starter...
    Like what you see when making Kombucha. It looks like a flat, semi-clear, gelatinous pancake that floats on top of the liquid. it's always present with homemade vinegars. It looks awful and scary, but it's necessary to generate fermentation.

    A ginger bug is a fizzy, probiotic drink made from fresh ginger root, sugar and water that is allowed to ferment and get bubbly. It's very easy to make and it's wonderful when you mix it with some fruit juice.
