Chicken Primavera
Chicken breasts, skinless & boneless (up to 6 depending on size of pan)
3 yellow summer squash, 1/4 inch sliced 1 zucchini (optional), sliced
1 large onion, sliced * 2 cloves garlic, crushed (optional)
1 14.5 oz. can diced tomatoes 2 Tbs. olive oil
1 tsp. granulated garlic 1 tsp. basil leaves
1 tsp. granulated onion 1 orange or red bell pepper, lrg. diced(opt)
1/2 tsp. oregano pepper
1 Tbs. parsley flakes 1 15 oz. can tomato sauce
Saute onion in olive oil on medium heat. When starting to soften add squash, zucchini, bell pepper & garlic. Sprinkle generously with granulated garlic, pepper & basil. Saute about 5 minutes. Add tomatoes with juice, stir. Put breasts on top, single layer, & sprinkle generously with granulated garlic & onion, pepper, basil, parsley & oregano. Pour tomato sauce over all. Cover & simmer 30-40 minutes. Serve as is or over cooked low-carb pasta. Sprinkle with grated Romano or Parmesan cheese.
*If you don’t like onions, be sure to use granulated onion on the veggies & chicken for the added flavor. Dehydrated minced onion is another option.
