    HAM AND POTATO SOUP

    Serves 8

3.5 c. Peeled and diced potatoes
    1/3 c. Chopped celery
    1/3 c. Chopped onion
    3/4 c diced cooked ham
    3 and 1/4 c. Water
    2 Tbsp. Chicken bouillon granules
    1/2 tsp. Salt
    1 tsp. Pepper
    5 Tbsp. Butter
    5 Tbsp. Flour
    2 c. Milk

Combine potatoes, celery, onion and ham with water in stockpot. Bring to boil, then cook over medium heat until potatoes are tender (10-15 mins). Stirs in bouillon and salt and pepper.

In a separate saucepan, melt butter over medium heat. Wisk in flour with fork and cook stirring constantly until thick. (1 min). Slowly stir in milk...continue stirring (med low heat) until thick (4 - 5 mins).

Stir the milk mixture into stockpot and cook soup until heated through! Serve with cheese (I melt some cheese in in the last few mins)!
I tried this last night and it was really good. Since I am allergic to pork I made it without and it still was great!

Sounds yummy!! Will be having that before long; Ham my DH bought today.
Here is another favorite from my collection of quick, easy, inexpensive Ham dishes:
    CORN CHOWDER
Diced ham to suit however many you are serving for
    Potatoes--diced small
1 or 2 cans Creamed Corn
    Seasonings

Cook potatoes until fork-tender. Add Ham and let cook about 5 min.--season with salt and pepper. Add some milk if it seems too thick.
Add the Creamed Corn; reduce heat, stir well and let simmer until hot throughout.
For 2 people I use about 1 cup chopped ham, 2 large potatoes, and 1 can creamed corn.

    One of our favorites!!
    Mariah.

From start to finish, this takes about 10 min. Serve with glass milk, bread and butter and easy dessert.

I made this soup for a poker party last night. I mostly followed the recipe except I cut down on the celery a little bit. They went crazy over it. It was very good. I have several requests for the recipe.

I love rivels in potato soup, too. And I put carrots in but not grated, just chopped up.
