This is the recipe I've been making since the 70's. Never had it fail.
FANTASY FUDGE
¾ c. margarine 1 (7 oz) jar marshmallow crème
3 c. sugar 1 c. chopped nuts
1 (5 oz) can evaporated milk 1 tsp. vanilla
1 (12 oz ) pkg. semi sweet chocolate chips
Microwave margarine in 4 qt bowl on high 1 min or until margarine is melted.
Add sugar & milk; mix well. Microwave on high 5 minutes (stir after 3 min.) until mixture begins to boil. Mix well, scrape bowl.
Microwave 5 ½ min. (stir after 3 min)
Stir in chocolate chips until melted.
Add marshmallow crème, nuts and vanilla, mix well.
Pour into buttered 13 x 9 inch pan. Cool at room temp. Cut into squares.
Yield: 3 pounds.
For peanut butter fudge substitute 1 cup peanut butter for the chocolate chips.
12/18/09 mistakenly put in whole 18 oz jar of crunchy peanut butter & it was the best fudge!! No problems setting up either.
Dec 2011- Used peanut butter chips in place of peanut butter & worked great

I just made some this evening, easy too. I make this one every xmas now...
One can sweetened condensed milk
2 c. chocolate chips
1/2 c. nuts, chopped (I use walnuts)
1 tsp. vanilla
Use a large glass bowl, melt milk & chips in microwave on high for around a minute. Then stir to blend & make sure chips are melted. Stir in nuts & vanilla, then pour in a greased (or foil lined) 8x8 pan & chill till firm, (I usually chill overnite to be sure).
Couldn't find my old recipe, so went looking online! Use to do my on the stove, but wow, this microwave way was much faster! May need more nuts next time, but will see when we tried it. I use walnuts, but I'm sure you could use any kind you like. No more cooking methods for me, this fudge never fails, is quick & yummy!...

I make fudge every year. I always use the recipe on the marshmallow fluff jar. Here are a few in hints: Always make fudge on a clear day not cloudy,so my grandmother said. Also time carefully, start timing when the milk, sugar, butter mix hits a rapid boil and cook for four minutes exactly. Stir constantly but don't scrap the sides and bottom too often, just keep it moving. Have everything ready to dump in, open the jar of fluff, have chip bag open, measuring spoon out and vanilla bottle open. Have the pan ready for fudge to be poured in. Do all of this before putting heat to pan. If using an electric stove, get the pan off the burner at exactly four minutes of rapid boil. Your fudge is grainy because the sugar mixture did not cook long enough.

Go to " The Cooking Mom" on Fox 11 news, living with Amy and get her recipe...I've made her fudge many times and it always turned out better than any I've ever made...If you can't find it I will give it to you
