I have a dehydrator and used to make beef jerky when my kids were younger and I could get some top sirloin on a great sale!
They loved taking it to school and also when they went on backpacking trips.

No you have to have the butcher slice it thin for you, or if you are good with a knife then you can slice it thin before you cook it because if you leave it whole you will have a raw roast in the middle. Enjoy the recipe it does come out very good and tasty.
If you slightly freeze the meat so that it is firm but not rock hard you can slice it very thin.
