    Default Edamame and Apple Salad

    Edamame and Apple Salad

    1 lb frozen shelled edamame
    Bring 5 cups water to a boil Add edamame, return to a boil, and cook for 5 minutes. Drain and rinse well with cold water. Let cook for 10 minutes

    2 tablespoon vegetable oil
    1/2 cup rice vinegar
    salt & pepper to taste
    2 Granny Smith Apples finely chopped
    1 - 8-ounce Jicama peeled and finely chopped
    1 cup finely chopped cilantro

    Mix above ingredients in a large bowl. Add edamame, apple, jicama, and cilantro. Toss to coat and serve immediately.
    Kids might like raisins or nuts.

    I really like Edamame. This looks like an interesting and tasty recipe. Will have to try it. Thank you for sharing.

    I love Edamame - have NO idea what Jicama is - and I would leave out the Cilantro :-) Raisins and nuts sound good! Thanks for sharing.

    Edamame are soy beans come frozen in grocery stores Jicama is some what like a potato lbmyway

    Sounds good to me. I like edamame and I like apples - never would have thought to put them together. Thanks for posting this!
