looking for cauliflower recipe

Does anyone have a recipe where you take cooked cauliflower and mash it up sorta like mash potatoes and bake it. It sorta puffs up and is creamy. I had something like this at a wedding and it was good. My husband is diabetic and we're trying to cut the carbs so I thought this might work. Any ideas? Thanks.

here is one. Basically just use cauliflower in place of potatoes. i use this site a lot.

Thanks for your suggestions. I sorta followed Zenna's recipe. Wish I would have seen it first before I made mine. I steamed a head of cauliflower and sauted some onions. When done I mixed together with salt, pepper and an egg. I added some milk and swiss cheese. I put it in a corning ware and sprnkled bread crumbs and baked for 30 minutes. It came out pretty good and my husband agreed too. Whew! Some of my experiments don't always come out. Thanks again for your suggestions.

This recipe is nothing like what you asked for but is delicious. We are not huge cauliflower fans here but we all love this recipe from weight watchers. I eat the leftovers cold the next day. Free on WW.
CAULIFLOWER POPPERS
1 medium head cauliflower
1/2 tsp each cumin,chili powder, salt and pepper
preheat oven to 400. cut cauliflower into small pieces. Mix together spices. Spray a baking sheet with non stick spray. Sprinkle spices over cauliflower. Bake about 10-12 minutes. Enjoy

I prefer ROASTED cauliflower now.
cut the head into bite size pieces, spray a 9 x 13 glass pan and toss the bits into it..then spray the bits...and sprinkle with sea salt, garlic powder and a light amount of red pepper flakes!
bake on 425 for 20 minutes, or until the tops are golden!
This is great...and the next day cold on a salad is good..or in the winter pureed like a soup...yummmyyy
PS. I am diabetic with a lapband and this is GREAT for me!
