Don't know what happened. Chicken Veronique is the name of the receipe. I used to have a tea room and this was the most popular item on menu. I served it with Sun Chips

Mine is very simple and I get rave reviews....fresh chicken meat, finely chopped celery, a little poultry seasoning and Miracle Whip instead of mayo.

Here is one from another QB member when I asked for some healthy recipes. I made the recipe didn’t have blueberries though so left them out. Even so it was very good with the yogurt. http://www.quiltingboard.com/t-124214-1.htm#3291096 When I make chicken salad I always cook the chicken breasts in the crock pot with an onion and garlic. The chicken salad breaks up easy and tastes so good in the crockpot.

I don’t have my recipe written down so I don’t have exact measurements just do it as I go. But I always add one or all of the following: onions, celery, mayo, sour cream, dill relish, salt, pepper, fresh minced garlic, grapes or apples.

EDIT: I forgot to mention I add poultry seasoning too.

You can add whatever you like to this...

I brush breasts with the skin on with olive oil or butter..then salt and pepper entire breast. Bake in the oven for about an hour at 350. I let them cool. Remove from the bones. The chicken is so flavorful.
When I make this I make extra ones and then freeze it.

A former employer's wife always added a little cole slaw dressing to her chicken salad. Wonderful!

    CHICKEN SALAD
    Cooked Chicken--chopped into bite-size pieces.
Salt and Pepper and mix well.
Sweet Relish--just use your good judgment.
    Minced Onion--" " " " "
Sliced Olives--both Green and Black--...good judgment.
Mix well and add Mayo and about 1/2 as much Sour Cream as you did Mayo.
Mix very well, and adjust seasonings, ect, to taste.
    We like this a lot.
    Keep cool!

Roasted chicken from Walmart, pull apart by hand to shred; add chopped pepper, celery, craisins, pecans, bread 'n butter pickles, mayonaisse.

Can add grapes and/or regular raisins, a bit of curry powder and a touch of honey mustard to the mayo.
