    What is desiccated coconut?

    Cool in pan. When cooled remove from pan and cut the slice into fingers to serve.

    I'm guessing it would be finely shredded coconut???? We just buy it from the supermarket. Hope that is helpful.

    Thank you everyone for your generous response, and thanks so much for the recipes and the sites to look up. Thanks for the tips too, I am sure I saw a post telling me how many ounces are in a can of cherries or something, but I cannot spot that post!

    Out here in <st1:country-region w:st="on"><st1lace w:st="on">Australia</st1lace></st1:country-region> we buy two types of coconut in the packet. One is shredded which is in shreds about half inch long, and the other is desiccated coconut which is more ground up. Just right to coat lamingtons with as well as to use in cake and biscuit making. <o></o>

At the moment I am racing to finish a quilt for a new baby granddaughter, I'm flying down to Hobart on Tuesday to visit her and her parents.     Mitquilt I hadn’t thought to check out the manufacturers web site. Out here the two brands I have seen in the supermarket are Greens and White Wings packet cake mixes. I think your packet cake mizes are bigger than ours. Maybe your tins of apples and cherries are too.

    There isn’t much difference we use metric for measuring now , but I still think in Imperial measuring! There is a slight difference between your tablespoon measurement and ours. It took me a long time to figure out your stick of butter is 4 ounces. http://alldownunder.com/australian-convert/measurement-chart.htm
    I have in my mind what to do if your cake mixes in the packets are larger than ours and if the tins of pie apples etc hold more. I just adjust so I get a nice cake consistency.

    My favorite cake mix recipe makes a mock cobbler.....fruit on the bottom and a soft crust on top for those of you who might not use that word in your country! Grease a 9 x 13 pan. Pour in two cans of any pie filling and spread evenly. Pour a box of dry cake mix on top and spread evenly, using your fingers to break up big lumps; small lumps are OK. Slice 2 sticks (8 oz total) of butter thinly and spread evenly over the top. Bake at 350 for about 45 minutes or until top is completely moistened and browned. My favorite combinations are apple pie filling with spice cake mix and cherry pie filling with chocolate or devils food cake mix....but the possibilities are endless. Also, this recipe doesn't depend on exact sizes of pie filling or cake mix so everybody should be fine, even if your boxes or cans aren't exactly the same size as mine! Enjoy!

    There is always the standard recipe sites I go to to find a special something to bake too. They are allrecipes.com and recipegoldmine.com. They both have great cakes (from mixes and scratch.) There is also country woman.com and betterhomesand gardens.com. Oh and don't forget Gourmet.com

    If you go tothe manufacturer of the mix you will usually find some very good recipes, fancy cakes, cookies and bars,fruit cobblers,etc.. Ones I like are:

    I love the cake mix doctor too. One of our favorites is the Dump cake. In a 13x9 pan dump a can of crushed pineapple in juice (15oz). Dump a can of pie filling on top of that. My favorite is blueberry pie filling. You dump a dry cake mix on top and spread it out. We usually use a yellow cake mix but you can use any flavor. Thinly slice a stick of butter over the top. Sprinkle with nuts if you want. I have also sprinkled with coconut. Bake at 350 for about 30 to 35 minutes. SO simple and so good.
