    When our three kids were living here I made pancakes from scratch. Since just two of us live here we just buy pancake mix and just add water.

    I use the “Jiffy Baking Mix”. I like it a lot better than “Krustez” pancake mix, which to me always had a strange after taste ( kids tell me I am crazy) but the Krustez company makes my favorite hot cereal “Zoom”. Can’t win ‘em all I guess.

    When my kids were home I made pancakes, dipped them in beaten eggs and fried like french toast. Made a pan full of bacon, had fruit puree for syrup, and was dinner about twice a week. They ate pizza or peanut butter sandwiches for breakfast. Pizza is fast and easy for the rushed school mornings.

    So you are paying extra for ordinary flour?!!!!! Pancake mix is flour, eggs and milk, or milk/water mix. Add a bit of sugar, if you want sweet pancakes.

    I make pancakes and crepes from scratch with the recipes in the BHG cookbook from 1977. My daughter was recently here for her fall/autumn college break and half the crepes recipes is quick to make for a nice breakfast.
