    Does anyone else here grow your own parsnips?

    Do you dig them in the Autumn, or leave them in the ground all winter and dig them in the spring, like I do?

    I love parsnips! They make such a wonderful spring treat - fresh vegetables out of the garden in March.

    How do you cook your parsnips?

    I dig mine in the spring. I like them steamed, raw or any other way I get them.

    We love parsnips and I par boil and fry in butter, mmmmm
    so good.

    Me, too. I also use little in homemade chicken soup and in beef stew and soup. They are also good roasted with other root veggies.

    How about when the check-out clerk at the grocery asks "What's this?". Ditto for turnips, rutabagas and kohlrabi!

    My Mom used diced turnips in beef veg soup. Adds a rich flavor.Grma sliced parsnips & fried them in a skillet.So good.

    Love parsnips any way you cook them. I also like to cook equal amounts of parsnips and carrots together and mash them after you save the liquid for a pot of soup.

    MY Grma used to make carrots & parsnips mashed....so good. Ppl can sure do a lot with a little when cooking from scratch & besides it tastes better.

    Cube them drizzle with olive oil salt pepper bake at 350 till light brown.
