Default Peach pudding Cake...try again to post


PeachUpside-Down Pudding Cake

Ingredients
  • 1/4 cup butter (margarine)
  • 1/3 cup packed light brown sugar
  • 1 (29 ounce) sliced yellow cling peaches, drained
  • 1 package yellow cake mix
  • 1 package vanilla instant pudding mix
  • 4 eggs
  • 1 cup sour cream
  • 1/4 cup oil
  • 1/2 teaspoon vanilla extract
Instructions
  • 1
    1. Combine butter and brown sugar and pour into 13x9-inch pan.
  • 2
    2. Arrange peaches on top.
  • 3
    3. Combine remaining ingredients in large bowl.
  • 4
    4. Beat at medium speed 4 mins.
  • 5
    5. Spoon into pan and bake at 350 dgrs for 50-55 mins or so long as cake springs back when touched.
  • 6
    6. Cool in pan 5 mins.
  • 7
    7. Invert onto platter, and cool absolutely.
  • 8
    8. Garnish with whipped topping, if desired.

We can our own peaches from our orchard. If it fails us, we buy Georgia Peaches by the bushel and can them.

Question on the instructions:

1. States to "pour" - Combine butter and brown sugar and pour into 13x9-inch pan.

Are you supposed to melt the butter & sugar?

Its on my 'to do' list, although I have made similar cakes. Yes, melt the butter and cream it with sugar in the mixing bowl. It makes an excellent Chocolate cake with chocolate chips and pudding in it substituted for the peaches, etc., in this recilpe and came from Mrs. Clause at the the North Pole cake recipes.
