    1/2 cup walnuts, chopped
    1 cup sugar
1 cup butter or margarine, melted (2 sticks)
Mix all ingredients together. Press half of the mixture into pan - set remaining mix aside

    Filling:
1 large can of crushed pineapple
    1/2 cup sugar
    2 tablespoons corn starch
    1/4 teaspoon salt

Put all filling ingredients into pan and bring to a boil, reduce heat and then simmer 4 minutes

Remove from heat, and add: 1 tablespoon butter, 1 tablespoon lemon juice (optional). Pour over crust mixture, spreading evenly. Sprinkle remaining crust mixture over top.

Bake 30 minutes or until golden brown.

    Enjoy!
Nothing better than coconut and pineapple. My very favorites and know that I will make this. Thanks. Marge

Oh, no calories. I've discovered a scientific study that said when you eat a rich dessert, all you have to do is stand up, stomp one foot and the calories all flow out of the foot still on the floor.

So I'm going in to have that last piece of pumpkin pie..with whipped cream. And a cherry on top. And a cup of hot cocoa.
Then I'll go out on the cement walk and stomp a hole in it.

Your recipe sounds delicious & I've printed it. I have a question though. For the pineapple, is it drained or with the juice?

Thanks so much for sharing it with us.
