I have put in a baking dish , layer the chicken , swiss cheese then cover with stuffing. I poured a can of cream of chicken diluted with 1/2 a can of water. Baked at 350 for about 45 minutes.

That looks good. Skinneytaste has a lot of great recipes. I'm tempted to try the pickle juice marinated chicken tenders.

I put frozen chicken breasts (about three) in a crock pot with a can of chicken broth and cook for about 4-6 hours. The most tender and tasty chicken you will ever have. I cook beef and pork this way also. I use beef broth for the beef and pork. I toss the broth when done, it could be made into gravy.

I have not tried this yet but plan on doing it this week. I was watching Home and Family which was filmed live at Dollywood last week. Dolly gave the recipe for her fried chicken sandwiches sold at the park. Of course I won't be frying the chicken breast but grilling it. The chicken is marinated in PICKLE JUICE for 4 - 6 hours (she stressed no more than 6 hours!). Then, to do the frying, the drained chicken pieces are dredged in several coatings (combinations of egg and pickle juice, then a combination of flour and powdered sugar -- ratio of 10-1). I will be trying just the marinating process with the pickle juice. I always keep leftover pickle juices to be used over salads or in making vinaigrettes. AT the moment I have bread and butter pickle juice available in the fridge.

Just noticed that quiltbuddy mentioned using pickle juice as a marinade.

i like to roll mine in canola oil season roll in panko and bake next day use left over for salad

For bone in chicken breasts I have something that is stupid easy.

All you do is sprinkle all over with Goya Seasoning(the one with cumin-it has a green lid)and bake for an hour at 375.

I make rice a roni and fresh steamed broccoli to go with it.

(Chicken and broccoli is a good anti cancer combo BTW)
