Teresa's Walnut Joys

2 large eggs, beaten
1/8 t salt
3/4 c sugar (I use Splenda)
1/2 c flour
1 t vanilla
1 T melted butter
2 c coconut
1 c choc chips (I use dark)
1 c chopped walnuts


Mix well. I use a small ice cream/cookie scoop for these. Bake on greased cookie sheet (I use parchment paper)for approx 12 minutes at 325. Cool completely, store airtight for up to a week. Not that they last that long :-)

I double the recipe, kind of. Basically dump the bags of coconut, choc chips and walnuts in. Neighbors/friends love them. Me too. And made with Splenda they aren't toooo bad!

I really LOVE macaroons....sadly I can no longer eat them..but I do love to make them!

Are you a candy maker? Fudge, peanut brittle?

This reminds me of years ago when DD was in high school. She wanted to 'borrow' monies to get presents for 20 :shock: of her friends. Even if it was just $5 per person that is $100 :? I suggested that she make candies. She and GF purchased sugar, chocolate chips and some of the other 'main' ingredients. I supervised, they did the work and made 20 cute and sweet presents. Later I found out that most of the 'friends' were guys . . . they loved the sweet present. The next Christmas I had 4 girls in my kitchen making sweet presents for their friends. ;-)

This is a recipe for MICROWAVE PEANUT BRITTLE
In a glass pan with handle, combine:
1 cup granulated sugar (that's plain white sugar)
1 cup raw peanuts
1/2 cup white syrup
dash salt
Stir with table knife.
Cook on high for 4 minutes in microwave.
Stir with a kinfe and add: 1 TBsp margarine and
one tsp. vanilla.
Cook on high another 4 minutes. Again, stir with knife.
Cook another 2 minutes. and stir with knife.
Add 1 tsp. baking soda ..quickly stir and pour immediately
onto a greased cookie sheet and let cool.
After mixture has cooled completely and is hard, break
into pieces.
Store in airtight container. Makes about one pound.

You must pour very quickly as it will start hardening in
the pan in a matter of a few seconds. I have never had it
fail. Make sure your peanuts are raw..Here, I can only find
them in the produce department of the grocery store, and only during the holidays. It is so quick and easy to make.
The knife is a table knife. Everybody we know loves it!

What is "white syrup" and where does one get "raw peanuts"?

oh wow...this is like the Comstock mother lode of recipes to help save money AND not waste food...AND make gifts..especially for elderly neighbors...
