Towncraft the pots form a seal while you cook helps conserve energy and vitamin loss. I think the skillets also work great, and the lids will seal on them also.

If I had the money I would buy AL CLad. I have Calphalon professional and love it. I have bought it piece by piece. Only buy Nonstick fring pans. I don't buy expensive one's so that when they get scratched they can be thrown away.

My brother got some titanium pans. You can use metal or plastic cooking utensils in them and they don't scratch. He says nothing sticks so very easy clean up. The only draw back is price. VERY expensive but won't peel like the teflon pans do. I would like to get some but can't right now.
