I made "tofu hollandaise" sauce today. I poured it over a couple of pieces of homemade sourdough and some roasted asparagus for breakfast. Pretty yummy! I won't try to fool ya...there is really nothing as decadent and lovely has real, homemade hollandaise, but this version is super easy to make and doesn't have the calories, fat, or cholesterol that the real version has. It doesn't taste bad either.

In a blender add:
1 box shelf stable tofu, any firmness
juice of 1-2 lemons, depending on your taste
about 1 T olive oil
about 1-2 T nutritional yeast
black salt to taste (Adds that eggy flavor. If you don't have any, regular salt will do, but it will not taste as rich.)
a dash of hot sauce
a couple of T of water

Blend until smooth and creamy. You may have to add more water to get it all to whirl around in the blender, but don't add too much, or it will become runny. Pour into a pan and heat under low just until very warm. Serve.

I was surprised to find that my favorite French Press coffee can raise cholesterol. There is a substance (cafestol) in the coffee that is removed by paper filters, not by metal filter or no filter. Sigh, the things I do for my health.

I forgot to mention that you can add a pinch of turmeric to the hollandaise sauce for color. :)

This is a helpful thread. Thank you, Tropit for posting it. I do take Crestor to lower the cholesterol my body makes, regardless of what I eat. I've noticed over the years I eat almost no beef -- except for an occasional In-N-Out. I'd sure appreciate some good fish recipes!

It's not cholesterol in the coffee, it's a substance that affects how your body deals with cholesterol.
they used to think it was cholesterol in foods that was bad, but it is really saturated fats.

So...what about coffee made from an espresso machine? I'm assuming bad.

Ummmmm...In N' Out...(Shake it off!)

About fish and seafood...I've been finding very inexpensive seafood in the freezer section at our local Safeway s/a large, peeled and deveined shrimp, Wild Pacific Salmon, Cod fillets, whole, shelled clams and whole, shelled mussels. The prices are really low...lower than chicken, or even tofu and the quality is good.

Tonight, I'm making mussels in tomato sauce with linguini along with a green salad, with some goodies thrown in. So simple. Make your salad ahead of time and add whatever, little morsels you want, toss with OV and set aside for just a few minutes while you make the mussels.

The very easiest thing you can do is to open a can of marinara sauce, chop up a couple of tomatoes and toss them together in a saute pan. Add a little clam juice, or kelp powder, if you have those, a fresh squeeze of lemon, some minced garlic and some chopped parsley. Simmer for just a couple of minutes and when you are ready to serve, throw in the shelled mussels and some cooked linguine and heat through. Serve with some parm cheese, or hemp seeds on top along with your special salad...done.

Ha! Ha! Two of my absolute favorite foods help reduce cholesterol; salmon and avocado. I tended to avoid both until my Dr told me I could eat as much as I liked (sauces and add-on are a problem though) as the healthy benefits of lowering my cholesterol was well worth any extra calories!
