If you want to read some good books, try out the collection of Joanne Fluke mysteries. The stories take place in Minnesota and some of the stuff is so true. They are humorous mystery stories. are you looking for ones like I posted or more like the ones that have veggies in them? Mine are more like desserts I guess, not sure if that's what you all are looking for... I have an apricot, cranberry, the pistachio one, etc.

My favorite jello recipe:
bottom layer lime jello with crushed pineapple (drained) middle layer cream cheese with chopped walnuts top layer cherry jello with cherry pie filling Very pretty in a mold. |
Here is a quick jello recipe. 1 pkg. dry jello, 1 small container of small curd cottage cheese, 1 small can of crushed pineapple- drained well., 1 small container of cool whip, 1 /2 -1 cup of chopped pecans. I mix dry jello and pineapple well, then stir in cottage cheese and finally add cool whip, add pecans if desired. Refrigerate, you do not have to worry about this having to gel at all. You may use any flavor of jello, and each flavor, gives the salad a different taste, Apricot jello is great with this, however I usually use lime, because my family likes it best. Hope this helps!

Here's one for lime jello WITHOUT pineapple. It uses canned pears and is very good:
Lime Jello Salad Whip 1 (6 oz.) pkg lime jello 1 (8 oz.) pkg cream cheese, diced 1 can pears, #2 1/2 can (about 29 oz), drained, juice reserved 1 envelope Dream Whip or 8 oz pkg of Cool Whip Dissolve jello in 2 cups boiling water, add cream cheese to hot jello, beat with egg beater or electric beater. Add 1 1/2 cups pear juice. Let jello cool. Mash pears with potato masher (I just dice them or slice small. Add to cooled jello. Refrigerate until set. Frost top with whipped topping. Serves 12 I dress this up by decorating with drained and dried maraschino cherries and a sprinkling of nuts. |

I tried this at a guild potluck and it is delicious. The quilter shared her recipe with me. I like it much better the the Coke jello salad recipe. Cranberry Salad 2 (16 ounce) cans whole cranberry sauce 1 (15 ounce) can crushed pinepple, drained 1 (6 ounce) box orange Jell-O 1 cup chopped walnuts or pecans (I use more 'cause I like lots of nuts) Mix cranberry sauce with pineapple. Add dry Jell-O and nuts. Pour into a mold or glass dish. Refrigerate until set Sounds yummy!!! Kirsten |
Hey Kathy, thanks for the three layer jello recipe, I will just have to try it. I know exactly where Marietta, O. is. As well as P-burg, as I lived for 7 years 85 miles from P-burg, in a small town in the central part of the state, Glenville, W.Va. I started my college career in Glenville. I lived for a short time in Cortland, O. also. I lived two yrs in Ky., in fact graduated from High School in Scottsville, Ky. However, I am a native Texan and came back home in '68. My dad was in the oil & gas business and we moved to Ky. in '59., then on to W.Va. and finally back home in '68. I haven't lived out of the state since. But then this is really home for me born and raised in Texas. Gerbie

I can't believe that this isn't already up- This is my family's recipe, and it is soooo easy and fabulous- you never need to mess with cooling or jelling, and it can be made a little more dietetic if you use low-fat or non-fat milk and cream cheese:
2 pkg jello (any flavor) 1 can crushed pineapple in own juice- do not drain. 8 oz cream cheese i can evaporated milk pecans or walnuts( optional) sliced marschino cherries (optional) Put entire can of pineapple in saucepan and bring to a boil. Add jello, cook until dissolved, stirring constantly. Mix in cream cheese (a hand mixer helps here) until smooth, stir in evaporated milk and nuts and/or cherries if using them. Pour into mold. My husband likes this so much I occasionally make it between holidays as a dessert! |

Frosted Orange Salad
Pineapple, bananas and marshmallows are folded into orange Jell-O in this refreshing salad. Frosted with a creamy topping, pecans and coconut, this yummy dish is a real crowd-pleaser. 3 packages (3 oz each) orange gelatin 3 cups boiling water 1 can (20 ounces) crushed pineapple 3 cups cold water 4 medium bananas, sliced 2 1/2 cups mini marshmallows 1/2 cup sugar 1 tablespoon all purpose flour 1 egg, beaten 1 package (8 ounce) cream cheese, softened 1 cup whipping cream, whipped 3/4 cup chopped pecans, toasted 1/2 cup flaked coconut, toasted In a bowl, dissolve gelatin in boiling water. Drain pineapple, reserving juice. Stir in cold water, bananas, marshmallows and pineapple into gelatin. Pour into a 13" x 9" x 2" dish coated with non stick cooking spray, refrigerate until firm. Meanwhile, in a saucepan, combine sugar and flour. Stir in reserved pineapple juice until smooth. Bring to a boil over medium heat: cook and stir for 2 minutes or until thickened and bubbly. Reduce heat: cook and stir 2 minutes longer. Remove from heat. Stir a small amount of hot filling into the egg: return all to the pan, stirring constantly. Bring to a gentle boil: cook and stir 2 minutes longer. Cool. In a mixing bowl, beat cream cheese until smooth: add cooled filling. Fold in whipped cream, spread over gelatin. (dish will be full). Sprinkle with nuts and coconut. Enjoy and Happy Quilting, |

So sorry. I don't even have a recipe, so it didn't occur to me--
One large or 2 small boxes of Jello Large can of crushed pineapple in juice. (20 oz or so). Give it a shot. It's easy and yummy! |

We like this salad, and Hubby isn't a great Jello eater.
Cut Cabbage into thin slices--quite a bit of Cabbage. Add some Onion and a little Carrot for color. Put some Lemon Juice and water on it so it doesn't turn Brown. Prepare Jello as box says; 1 c. boiling water, 1 c. cold water. Add Veggies and refrigerate. Just make Jello salads for company, as I can't eat that much alone! Good luck! Mariah |
