I am still looking for that great jello salad recipe that you have every holiday on your table.
Can be lime, or strawberry or whatever...
I sure would appreciate it!

My mom alway's made lime jell-o (double batch), added crushed drained pineapple and minced carrots. I will be making it for tomorrows dinner. Just doesn't seem like Christmas w/o it.
Some folks put a dab of mayo on top.

Also, when I was sick she would make vanilla pudding in small bowls and then after it was set, she would add on top black cherry jell-o. Refridgerate until set and serve.
I still like this when I am sick.

Try making your cranberry relish dish with black cherry instead of strawberry or raspberry jell-o. Really good.

Bevanger 12-25-2009 06:16 AM

those sound good. never had them :-(

That's the way my Mom made lime jello w/ pineapple and carrots and the dab of mayo on top. It was yummy. But must admit I have never fixed it. Mom always tried to fix different things so meals did not become so monotonous.

My favorite recipe is (Diet) Beet Salad. I take this to many potlucks where I am always asked for the recipe and have at the Holidays as well.

Diet Beet Salad
1- 15 ounce can shoestring beets
1- 20 ounce can crushed pineapple in its own juice
2 small pkgs. sugar free raspberry gelatin
8 large lettuce leaves (butter lettuce is good)

Drain beets and pineapple reserving the juices. Measure juices together and add enough hot water to make 3 cups. Combine juice/water mixture with gelatin in a saucepan. Bring to a boil and then cool slightly. Add pineapple and beets: mix well. Pour into an 11" x 7" cake pan. Refrigerate. Cut into 8 pieces. Serve on Lettuce.

Servings 8: Cal. 68, Cal from fat 0; Total fat 0, Sodium 170 mg (7%), Total carb. 16g (7%); Dietary fiber 2 g (10%) Sugars 13 g. Protein 2 g.

Note: Regular gelatin can be used if you are not concerned about the extra sugar and a dollop of mayonnaise, for garnish, can be added as well.

Never would have thought of combining beets and pineapple. Sounds good to me!

quiltsmith 12-26-2009 01:07 PM

1 pkg lime jello
1 pkg lemon jello
Fix as directed on box in a 9 x 13 dish. Refrig until just gelling. Take out of frig.
Add
1 C cottage cheese
1 C sour cream (or to taste)
1 C mayo (or to taste)
1 small can crushed pineapple minus juice (you can use the juice with the cold water when making the jello)
walnuts
Mix all together, smooth out and refrigerate a few hours or until completely set.

ScubaK 12-27-2009 12:30 AM

Never heard if Mayo with the jello...
But all of these sound so good...
Thanks,
Now, which to try first...

This recipe is from the Great State of Minnesota where Jell-O and hot dishes are the main at the Lutheran church pot luck dinners. This is my very best favorite. The grandkids love it. Because it is green they call it Leprechaun Poop.

Mix together:
1 pkg (small) Lime Jello
1C hot water
1 - 4oz pkg softened cream cheese
Add a small can of crushed pineapple with the juice, 2 grated carrot and 2 stalks of grated celery (remove the "threads" first - makes it easier to grate).

When partially jelled, add 1/2C whipping cream whipped

Happy 2010

Edie

Edie 12-27-2009 03:13 PM

No, Ma'am, but I am one of them Scandinavian Lutherans with the blonde hair and blue eyes (well, eyes are blue, shades of grey hair - lots of shades) who cooks hot dishes, and jello salads. As a matter of fact, a few days ago my sister and I were talking about when Jello had a vegetable Jello. It was good. Instead of putting in sugar, you put in some vinegar and instead of fruit, you put in carrots, radishes, celery. It was really good!

I do like Garrison Keillor though! HAve several of his CD's. He talks just like us Minnesotans. I didn't realize we had a way of speaking or an accent until Garrison Keillor showed that we did! If you want to read some good books, try out the collection of Joanne Fluke mysteries. The stories take place in Minnesota and some of the stuff is so true. They are humorous mystery stories. I prefer the audiobooks. But whatever rows your boat.

Ya Shure, you betcha! Edie

I have never made it for any holiday but I like this one,

Make up lime or lemon jello, put it in the fridge until it is almost set, mix in about the same amount of Mayo, a little lemon juice and a bunch of slices cucumbers.

cutebuns 12-27-2009 06:43 PM

it is awesome, and it saves trying to get the fruit or veg to gel in the right place, my mom does a fruit cocktail on that you use the juice to make the jello and just put in the fruit from the can, and it usually floats, you have to add it or stir it just at the right time for it to be all the way through, I am not sure why but the cucumber and the jello go together really well,

Edie 12-28-2009 03:34 AM

The only time I cannot listen to a book is when I am reading directions, so I just put it on pause. I can't wait to get my new quilting station put together so I can get back to work here. I want to finish up the "Floating Stars" for our quilt and then I want to work on the cancer quilt, but this time, instead of using my own colors from my stash, I would like to have all the blocks in the same colors, but the patterns different. Gotta figure out how much fabric I need because the group that is sponsoring this is paying for the fabric, batting, backing and quilting. So, I will sit at my little station here and figure away, without the audiobooks on. Have you listened to the Jennifer Chiaverini stories? I am going to try to send you a private message. Edie

My Mom always used orange jello for this. We LOVED it.

I had an aunt, actually I was named after her, who loved to dress up salads. Here is the one I remember - a small plate with a few pieces of lettuce, a slice of pineapple, 1/2 banana to stand inside the slice of pineapple hole (get the picture?) and a little slice of maraschino cherry on top of the banana, sort of wedged in the top to look like a candle with a flame! Well, when you are young, it is really cool!

One of my favorites to this day is another one of hers; a few slices of lettuce on the plate, a half of a canned peach, a dollop of cottage cheese and French dressing sprinkled over the top!

I also like any flavor of Jell-O, mixed with 1C boiling water,1/4C sugar, 1/4C cold water or fruit juice. Mix it up, let it set and then add 1C of whipped cream (or you can use one packet of Dream Whip mixed up). Very pretty, very light for a hot day. I served it with Lime Jell-O for our son's graduation 1,000 years ago. I tripled the recipe and it all went. IT is called Basic Bavarian!

You want salad and Jell-O recipes, as a Minnesotan! I have a book called "Joys of Jell-O". Have had it for many, many years and still use it. It is dog-eared, messed up, stained, but a tried and true recipe book. If you need any, please let me know. There are even vegetable salad recipes.

Does your "Joys of Jell-O" book happen to have a recipe that uses sauerkraut as one of the ingredients, Edie? There was a jello salad that my grandmother used to make that seemed so bizarre to me when I was young... she claimed it was good and it was good for you and that it was on her "diet"... she seemed to be forever on a weight loss mission... wow, can I evermore relate to that now! If you find it and would be so kind to share, I'll try it and let you know how it turns out. Your efforts will be appreciated...I'm all ready thankful to you for your post that provided me another opportunity to remember another bit of what made my grandmother so special.

How far are you from the Wisc. border.

Actually, I was being facetious. Missouri Synod sounds like Misery Cyanide~~~~ I am German on my mother's side and Swedish on my father's side. My grandparents on my father's side both came from Sweden. Grandpa and Grandma on my mom's side came from Wisconsin and came to roost in Waterloo, where my grandfather was the "Village Smithy". He had his own blacksmith shop!!!!!

I live in St. Paul, Minn, which is about give or take 25 miles from Hudson, Wisconsin. Appleton Wisconsin is where Aid Association for Lutherans Insurance Company was/is. Now it is Thrivent. I think it is now located in Minneapolis. Edie

I amSwedish on my mother's side and German on my dad's side. the Missouri Synod is stricter than the synod I am in, isn't it. I know some of the beliefs but not all.

The beliefs are the same - the Mo Synod is just more conservative than the ELCA. my Mother's church was ELCA and they broke away because it was too liberal. I think that is the only difference. We have the same church service as you, we just don't go with the more liberal ideas.

But we are all one under God, right???? Golly, I sure hope so!~Edie

The Bag Lady 01-01-2010 04:58 AM

Did your church go with the new hymnals when they came out---we didn't. By differences I mean you don't allow women in the pulpit or as ushers etc. or do you.

I work for C. Keepers and I had a client that wanted to be taken to church on Sundays and she was Episcopalian. I felt very comfortable in the church because their liturgy is just like ours---in fact I thught I was in the Lutheran church.

I used to work for the Lutheran School here in town and it closed at the end of June 2009. We ran out of money etc.
I know we are all working toward the same goal but I just am curious about the rules etc. in the different synods. Is there still a Wisc. Synod?

Some do, some don't. I personally prefer the old. I am not that keen on the newer jazzy type songs. I like the old hymns and I knew the world was changing when, at one time, I could go through either the main service or the Order of Matins without using the book. Now the tunes are different and I have more than once embarrassed myself by singing in my old tune. Holy Cats, I knew the Nicene and the Athanasian Creed by heart. I still know the Nicene though! I know the Missouri Synod does not have women ministers, but ushers I am not sure of, there again, it may depend on the church. I do remember at one time, back in the 50's, the Boy Scouts or Girl Scouts could not meet at a Missouri Synod Lutheran Church. I believe they do now! (That was a stupid rule anyhow)!

We follow the Bible to the letter and don't assume that this means that or that means this. If it says in the Bible that "gayness" is a sin, it IS a sin. But then my mother has an answer for that one. "Hate the sin - love the sinner." We had a neighbor who was gay. Nicest person in the world. I still believe what is a sin is a sin, but I would have missed out on not knowing a very nice person if I had carried it one step too far, that being hate the sin - hate the sinner. I know God hates the sin, and I also know God loves the sinner. I was baptized at St. Johns Lutheran Church - a Wisconsin Synod - my grandparents were Wisconsin synod, and that was the church my mother grew up in, so why not baptize me there!

WELS is the Wisconsin Evangelical Lutheran Synod. There are a few around here. There are several Missouri Synod, but a lot of LCA, ELCA and LCA. There is a breakoff of the ELCA here in St. Paul, and more places when it came to allowing gays to be ministers and live with their partners. That caused a tremendous brouhaha around here. Just leave me in the Missouri Synod, let me believe what I was brought up on, don't force things down my throat that I do not believe in and that God does not believe in (Because He says so).

Our son went to a Lutheran School here in St. Paul. It was exceptional as far as education and religious training is concerned. He had a terrible one year (7th grade) catching up from public school. (Anything you can do to get that school back in business would be a godsend to so many children. They learn so much more, not only education, but love, manners, respect for others. Things that are not taught in public schools. He also, in the eighth grade, was taught a lot of memory work for his Confirmation. It was a marvelous school and is doing great to this day and that was back in 1982. He then went on to Concordia Academy, which is a Lutheran High School. He was two years ahead in everything compared to my nephew who was in public high school. He went on to the University of Minnesota and now is an IT for a well known company! Very proud of that bugger!!!!! His grade school and high school were based on the principals of the Missouri Synod Lutheran Church.

If you listen to some of the Catholic services, they are the same as the Lutheran Services, also!

Hope that helps you a bit! Isn't this a marvelous outlet and learning experience for a lot of people?????? Edie

The Bag Lady 01-01-2010 10:29 AM

Edie,
Our minister is totally against gays in the pulpit. He has said he would welcome them into our service but not in the pulpit. He was very upset after our synod meeting this past fall because they agreed to allow gay minister in the pulpit.

I was born a Lutheran and am proud of it. I really enjoyed working at the school---15 yr. I like the fact that we could discipline the kids, pledge the flag, chapel etc. I had the After School Day Care Program. I really miss the kids. They are going to try and resurrect the school again in a few years. they probably won't be able to get any of the old staff back because we all have a very bitter taste in our mouths.

My gentleman friend is Catholic and prefers the Lutheran church.

I hope you don't mind me asking questions etc.

I don't mind at all. As a matter of fact it is nice to "meet" someone who has the same thoughts as I do.

Waiting right now for a neighbor to come over for a mug of apple cider with a cinnamon stick. It is only +5 degrees. REally cold out and he has been raking snow off his roof, his garage and shed, shoveling snow and putting down salt.

I shoveled a bit our sidewalk and our other next door neighbors. She'll be home from Chicago tomorrow. Still have to do her walk in the back. It is a mess here. All the chunks of slush are icebergs! Really icky. Edie

Hi all! New to the board, and happened across this topic. I have quite a few Jello salad/dessert recipes, if you are still interested. Unfortunately, it is now after the holidays when they could have been used!
Growing up, our main 'jello salad' was lime or orange jello, with drained crushed pineapple (if we had it in the pantry), shredded cabbage and carrot. Simple enough, but good for some odd reason.
Then my ex MIL handed down lots of Jello salads that she took to church suppers and I thought I'd died and gone to heaven - who knew you could put cream cheese, cool whip, puddings, and such in Jello???? LOL
Some of them are sweet enough to use as desserts, so we could never decide whether they were to go on the salad table or the dessert table, but we never brought any home! And a family reunion or get together wasn't complete without at least 2 of them somewhere in a big bowl.
If anyone is still interested, please let me know, I'll be glad to post some recipes for you.

Cheryl 01-05-2010 08:22 PM

My sister would always make finger jello and when she would put it in a bowl it look so pretty and it was delicious. And the kids just loved it.

crkathleen 01-14-2010 06:55 AM

Kathy, would love to see some of your family recipes!

Kathy0414 01-15-2010 10:32 AM

Sorry it took so long to get back to you, have been down with the bug a couple of days and haven't gotten much accomplished! Hope you like these, they are not like the recipes to use in the Jello molds, although I do have some of those in the back of the recipe box somewhere...
Clear glass dishes always look nice, as you can see the layers. If you like these, I have more I can post: some for cranberry, apricot, etc.

This is my sons' favorite:

Blueberry Salad
2 pkg. (3oz) raspberry jello
2 c. boiling water
1 lg. can crushed pineapple, do not drain
1 can blueberry pie filling
-Dissolve jello in boiling water, cool slightly. Stir in pineapple w/juice and pie filling. Pour into 13X9 pan or large dish. Chill until set.

Topping:
1 pkg (8oz) cream cheese, softened
1/3 c. sugar
1 tsp. vanilla
1 c. sour cream
Beat all ingredients together until well blended, spread over jello mixture. Chill to serve.

And for Valentine's Day, another favorite:

Cherry Surprise Salad
1 pkg (3 oz) raspberry jello
1 c. boiling water
1 can cherry pie filling
-Dissolve jello into boiling water, cool slightly. Stir in pie filling. Pour into 1 qt serving dish. Chill to set.

Topping:
1 pkg. (3 oz) lemon jello
1 c. boiling water
1 pkg. (3 oz) cream cheese, softened
1/3 c. real mayo (not Miracle Whip)
1 c. crushed pineapple (or small can w/juice, do not drain)
1 c. mini marshmallows
1 small tub Cool Whip
-Dissolve jello into boiling water, set aside. Beat cream cheese and mayo together, slowly add jello to blend, then add pineapple. Fold Cool Whip into jello mixture, then add marshmallows. Spread over cherry layer, chill to serve.

This one is a regular that is always on the table for big dinners:

3 Layer Salad

(1st layer)
1 - 6oz box lime Jello
2 c. boiling water
1 1/2 c. cold water
1 c. crushed pineapple, drained, reserve juice
1 c. chopped nuts (she used pecans)
-Dissolve jello into boiling water, stir in cold water, chill until just slightly set (like egg white consistency), then add in pineapple and nuts. Pour into large bowl or 13X9 dish. Chill until almost set.

(2nd layer)
1 pkg. Dream Whip, prepared as directed on pkg (can substitute small tub of Cool Whip, also)
1 - 3oz pkg. cream cheese, softened
-Beat cream cheese until smooth, then beat in the Dream Whip/Cool Whip. Spread over 1st layer. Chill to completely set.

(3rd layer)
1 c. reserved pineapple juice (or water added to juice to make 1 c.)
1 c. sugar
2 Tablespoons all purpose flour
2 eggs, well beaten
2 Tablespoons lemon juice
-Stir sugar and flour together, then add to juice, eggs and lemon juice. Cook over medium-low heat until it boils and thickens. Cool to room temperature, and spread over 2nd layer. Chill to serve.

The Bag Lady 01-15-2010 03:18 PM

Kathy,
what part of Ohio are you from?
I am from Dayton/Centerville.

Kathy0414 01-16-2010 12:09 AM

We live in Marietta, about 3 1/2 hrs due east of Cincinnati, on the OH/WV border along the river. I'm originally from IN, just moved here 2 yrs ago. Now a 'city girl'... LOL

Try making your cranberry relish dish with black cherry instead of strawberry or raspberry jell-o. Really good.

My mom made this too.

The lime/pineapple is delicious - and I add grated celery to it also, but I (thanks to Emeril) slice off the veins first! This is mine - 1 small pkg lime Jello, 1C hot water, 1-4oz pkg cream cheese, softened, mix together. Add small can of crushed pineapple (8-1/4 oz), plus juice, 2 grated carrots, 2 stalks of grated celery. When Jello has partially gelled, add 1/2whipping cream whipped. Oh, is that good! Edie

The Bag Lady 01-16-2010 05:49 AM

Kathy,
I have been through Marietta many times. when my mother was alive, I used to take her to see her sister in Salem, WVA. When the weather was nice I would take her down Rt. 50. I love WVA---it is one of my very favorites states to drive through. Do you ever go to Parkersburg to shop?

I went through the glass plant across the river from Marietta---I forget now what company it is but it was fun.

Kathy0414 01-16-2010 10:57 PM

Yes, hubby works in Parkersburg, and I usually go shopping there once a week, sometimes more in the summer/fall when it's nicer outside. Nice to sit by the river in Belpre, also, and have lunch.
Fenton Glass is the place you're speaking of. When we were dating, that was one of the first places he took me to here, as I love old glass.
Did you know there is a marble factory close here? If you've ever seen the TV show "Dirty Jobs", where the guy goes to factories, farms, mines, etc, to do a job thats really down and dirty for a day, they did a show on each place a couple of months ago. The marble factory is just a few miles from Marietta, and Fenton is just across the bridge in Williamstown. Lots of things to see here, find something new constantly!
We went to Blackwater for our honeymoon and traveled the backroads thru the state to get there... my, what windy, curvy roads!!! LOL But beautiful to see. We came back on the highway past the Gorge. It was breathtaking, people very friendly. We plan on taking another trip back there for our anniversary.
