I just made these for my Extension club meeting at noon...
OH MY...I did add walnuts and pumpkin pie spice as I love the crunch of nuts in my muffins and I love extra spicy pumpkin!

These are so light and fluffy! NOW I want to try it with a Spice cake mix!!!

You'll Only Need:
1 Yellow Cake Mix (Yes, you can Use a Gluten Free Cake Mix, it WILL work!)
1 -15oz Can Pumpkin

Simply dump them into the bowl, mix and put into a sprayed/oiled muffin pan! Bake on 325 for 20-25 minutes! and they FREEZE well!

This recipe is truly a 2 ingredient recipe. You don't need to add any oil, water, etc. However, you can add the following if you'd like:

1/2 c. Chopped Walnuts or 1/2 c. Raisins (or a handful of both!)
1 1/2 tsp Pumpkin Pie Spice

You can also make the same recipe with chocolate cake mix.

Thank you for this reciepe! I have to go gluten free and this is the first reciepe that I have found with out a lot of other ingredients.

Daisydoodle 10-06-2011 07:04 AM

Going to try this one today, muffins, yummy. I have been making the cookies from a post last year. Butter Pecan cake mix, 2 eggs, 1 stick butter and I add chopped pecans. Very thick, just spoon on to parchment paper, bake for 12 min at 350º. And wala, super cookies. If you have enough pecan halves I put one in the middle of each cookie before baking, just look ready for gift giving or gobbling up!

barb55 10-06-2011 07:05 AM

i have used this recipe for years and it is good. You can use angel food cake mix also.

Thanks for all the different recipes. Would anyone know the WW point value for any of these or the calorie count for 1 muffin?

Yum!! Thanks for sharing Jacquie....can't wait to try them.

barb55 10-06-2011 08:57 AM

with a white cake mix the ww points is 4. that is if you make 12 muffins. Angel food is also 4 points for 1/12 of a cake.
