Cranberry Nut Pie
1 1/4 C fresh/frozen cranberries 1/4 C packed brown sugar 1/4 C chopped walnuts 1 large egg 1/2 C sugar 1/2 C flour 1/3 C butter/margarine, melted Vanilla ice cream, optional Preheat oven to 325. Grease a 9 inch pie plate. Layer cranberries on bottom , sprinkle with brown sugar and nuts. Beat egg in medium mixing bowl until thick. Gradually add sugar, beating until thoroughly blended. Stir in flour and melted butter; blend well. Pour over cranberries. Bake 45 minutes. Cut into wedges. |
now that sounds good!! If it is summer time, I make a potato or macaroni salad and use ranch dressing instead of mayo. And add lots of fresh vegs, cut up.

I usually will make a corn casserole.
1 can of corn - not drained 1 can of creamed corn 1 box Jiffy corn muffin mix 2 eggs - beaten 1 stick butter (or margarine) 4 oz. sour cream Mix all together including the liquid from the canned corn into a 2 qt casserole dish (I use foil pans if going somewhere so I don't have to worry about getting the dish back). Bake at 350 for about an hour. If you just toss in the whole stick of butter, you may need to stir a couple of times to distribute that more evenly. You could melt the butter and add that while mixing or just chunk it up and toss in there as well. Bake until top is slightly brown. |
Banana pudding I use the recipe on the nilla wafer box.
Or an antipasti, pasta salad with lots of Italian meats, mozzarella cheeses and a Caesar like dressing. I also make pinwheels using the giant burrito size flour tortillas cream cheese, cavandars all greek seasoning, favorite lunch meat, lettuce tomato, and onions all rolled up and sliced. Yummo! |
I am always requested to make my Butter Pecan Cake.
Ssssshhhhh it's a secret - yeah right :p 1 - Cake Mix - Yellow BUTTER Recipe (I usually use Betty Crocker) 1 - Cup of Water 3 - Eggs 1 - stick of Butter (box says 1/3C but I use it all) 1/8 - 1/4 Cup of Vanilla 1/2 - 1 Cup of Chopped Pecans Mix according to box directions, adding Vanilla and 3/4 of the Pecans. Sprinkle remaining pecans on the top of the cake. Bake according to directions. Ice with Cream Cheese Icing if desired. I usually do not ice it because I really like the limited sweetness of the cake without icing. Enjoy! I started making this cake when we lived in North Carolina and had our own Pecan tree. We are planning a trip after the first of the year to gather more pecans. Luckily we worked a deal with the guy that bought our house so that we can always pick Pecans from our old tree. |
Oriental Cole Slaw
6 Green Onions, sliced 1 head Cabbage (chopped fine) or 2 large bags Cole Slaw Mix 2 packages Top Ramen Noodles (crushed fine) – omit seasoning mix ½ cup Slivered Almonds (brown under the broiler or a minute or two) ½ cup Sesame Seeds (brown with almonds) Dressing: 4 tablespoons Sugar 2 teaspoons Salt ¾ cup Canola Oil 1 teaspoon Ground Pepper 6 tablespoons Rice Vinegar (green label) Mix dressing and add to other ingredients just before serving. You can easily cut this recipe in half and also you can mix the dressing earlier in the day and refrigerate until ready to use. |
Chewy Chocolate-Peanut Butter Bars
1 18 oz. package Pillsbury Refrigerated Sugar Cookies 1 14 oz. can Sweetened Condensed Milk (not evaporated) 1 cup Crunchy Peanut Butter 1 teaspoon Vanilla 3 egg yolks 1 12 oz. package (2 cups) Semisweet Chocolate Chips Preheat oven to 350 degrees Spray 9 x 13” pan with nonstick cooking spray Cut cookie dough in half crosswise Cut each section in half lengthwise With floured fingers, press dough in bottom of sprayed pan to form crust Bake for 10 minutes In medium bowl, combine condensed milk, peanut butter, vanilla and egg yolks Mix until smooth Remove crust from oven Spoon mixture evenly over partially baked crust Carefully spread Return to oven and bake an additional 20 to 25 minutes or until set Remove from oven Sprinkle with chocolate chips Let stand three minutes to soften Spread chocolate evenly over the top Cool in the refrigerator for 1½ hours or until completely cooled Cut into bars Makes 36 bars |
I always bring this salad too and add chicken to it. In my quilt group I would probably be voted out if I didn't bring it. :D

Usually make either chili or American Chop Suey (pasta with ground beef and spaghetti sauce).
