Pineapple Casserole

1/2 cup sugar, combine with 3 TBs flour in a mixing bowl.
Drain 1 (20oz) can pineapple chunks, add chunks to the sugar/flour.
Add and stir in 3 TBs of the juice. Next stir in 1 cup grated Cheddar cheese.
Pour into a buttered 1 1/2 - 2 Qt casserole dish.
TOPPING:
Crumble 1/2 sleeve Ritz Crackers into a bowl. Add and stir in 1/2 stick melted butter. Spoon onto the casserole and bake at 350° for 20 to 25 minutes or until lightly browned.
This is a rather small casserole, but can be doubled easily.

Whenever I go to one friends house, for dinner, I am asked to bring this. It is amazing!!!

Fabulous Broccoli/Cauliflower Casserole 8+ servings

1 (10.75 ounce) can condensed cream of mushroom soup
generous ½ cup mayonnaise
½ cup sour cream
squeeze of lemon juice
1 egg, beaten
1/4 cup finely chopped onion
3 (10 ounce) packages frozen chopped broccoli (or broccoli-cauliflower mix) slightly thawed
8 ounces shredded SHARP cheddar cheese
bread stuffing mix
melted butter for above

Preheat oven to 350 degrees; Butter a 9x13 inch baking dish.
Mix condensed soup, mayonnaise, sour cream, lemon juice, egg and onion.
Break up the frozen broccoli in a large bowl.
Add soup mixture to broccoli, and mix well.
Sprinkle on cheese, seasonings you prefer, and mix well.
Spread mixture into prepared baking dish, and smooth top of casserole.
Blend bread stuffing mix with melted butter and sprinkle on top of the casserole.
Bake for 45 minutes in the preheated oven.

This was so good the first time I made it, moist and rich, that I was resentful there was only a smidge to take back home! :) It sounds complicated but is actually quite easy. And will make you look like a great cook! :thumbup:

I recently made this for a neighborhood potluck dinner & I recommend it. Be sure to mix the blueberries into the cream mixture.
