Even though the trees are spectacular in the bright sun, it's just a damp, chilly, windy day...Northern Ohio in the fall. While the game is on I'm making a big pot of chili that will be served over mashed potatoes.

Tonight (Sunday) we are having pinto beans with the leftover rotisserie cooked pork roast. Also on the menu fried potatoes and cornbread.

Reservations! Have been cleaning and doing laundry all day. Have dog sitter coming tomorrow so not interested in sli ing freshly cleaned kitchen before sitter arrives. Plus I'm tired,

Our local grocery store had whole chickens for $0.79 a pound, so I bought several, one is currently cooking in the crock pot, the others are in the freezer. Not sure what is going to be cooked with it, something simple. Thought about putting potatoes and carrots in with the chicken but we had a pot roast last weekend, and we ate the left overs all week. Rice rissoto keeps coming to mind.

I sautéed 1/3 cup finely chopped dill pickles, green onions and a jalapeno pepper in some butter......added 1 1/2 tbsp. flour......roasted a bit and then added 1 1/2 cups milk......I stirred until thickened......it was actually quite good served over the schnitzel.

Hadn't thought of chili over mashed potatoes but it sounds good. I ran across a quickie recipe a couple of years ago that they said kids liked: Just fix a box of Kraft's Mac & Cheese as usual and then mix in a can of your favorite chili. Amazingly, it is really good, and so quick to fix. I use Nalley's Original Chili (with beans).

I have 2 lamb patties which I would like to serve with mint jelly but can not think of what else right now as it's early on Mon and have cleaning to do as getting settled in Fl for the winter season and it 's going to be 90 f today.
