Tonight I'm serving won ton soup, chicken thighs and mushrooms, brown rice, blistered green beans. Fingers crossed.

DH picked up his nilgai from the deer processor, so we had chicken fried backstrap with cream gravy. I am not fond of white tail deer, but nilgai tastes milder, like beef.

We are having all the kids and grands over for supper tonight. Chuck roast in crockpot, mashed potatoes, gravy, mac and cheese, carrots and broccoli. I haven't decided on dessert yet. Probably apple pie.

I went to the doctor the other day and yay!!! My cholesterol went down and I lost 2 more pounds. No need for statins!!! So, I'm going to try to stay on track with my dinners. I'd like to make baked salmon tonight, but the kid hates it. I think that I'll make it anyway and let him make himself a sandwich, or burger. I have some leftover brown rice and some brussels sprouts to go with it.

As life changes, our meals change. Saturday went to lunch around 2:00pm with 2 friends.
One was going out to dinner with friends and hubby, so she just wanted soup. One is single and didn't want to cook dinner, so she ordered dinner for lunch and had leftovers for dinner. I hadn't had vegetables yet that day and didn't want to cook that at dinner just for myself so had big salad for lunch. The the other widow and myself talked about cooking for ourselves. We envied the other lady who still has a husband to cook for and husband to go to dinner with. I'm learning the adjustments to being single. I've never lived alone before. It's different. An adjustment Tonight, found green beans in freezer, added to left overs made a nice dinner scramble. Tomorrow will be fish night because the trash pick-up is Tuesday. |
My “Valentine” and I had elk burgers (no bun) , scalloped potatoes, steamed broccoli for dinner. Dessert was homemade cream puffs. I bought the elk at a specialty grocery store. Never tasted it before but it was alright.

Tonight husband is on his own, I have a guild meeting to go to.

Pulled some chili out of the freezer. Added some finely chopped onion, pureed mushrooms and jalapenos and tossed the whole thing into the toaster oven to thaw and heat. Will top with diced fresh tomatoes and shredded cheese and serve with whole wheat rolls.
Every couple of months, I make a triple batch of chili and freeze in single serve portions. I love having a go-to on those nights where I am too physically and/or mentally tired to plan and cook a meal. DH loves having a no-brainer supper for my guild nights. |
I'm still undecided. Across the street is a food store, and I'm heading to the gym. Later, after looking through everything, I'll determine what I want to eat. Whatever I chose, Mr. Stitchnripper will be satisfied. Here, it typically goes like that. Sometimes that comes with a different side because we do enjoy leftovers.

My husband will not eat leftovers...period. He will put the dish of leftovers in the fridge, pretending to want them later, and then never touch it again. I think that it's his way of avoiding having to wash the dish. What can I say? He's a 5 year old at heart.
Tonight? Artichoke hearts in a creamy sauce, pasta, some sort of eggplant dish on the side, only for me. (He won't eat eggplant either.) |
