    Tomato Basil Bowtie Salad
1 lb. plum tomatoes, chopped (2 cups)
1/4 C fresh basil leaves, cut into thin strips or 1 tsp. dried basil
1 Tbsp. vegetable or olive oil
    1 Tbsp. red wine vinegar
1 clove garlic, minced or 1 tsp. garlic powder
    1/2 tsp. salt
6 oz. (1/2 pkg) bowtie pasta, cooked and drained
    Freshly ground black pepper

In large bowl combine tomatoes, basil, oil, vinegar, garlic and salt. Add bowties: toss to combine. Sprinkle with pepper.
Serve warm or at room temperature.
Greek Tomato Basil Salad: Add 4 oz. (about 1 cup) crumbled Feta cheese with the pasta.

    This makes 3-4 servings

I personally double the dressing for mine.

The dressing is a regular vinegarette: olive oil, red wine vinegar or cider vinegar, lemon juice, garlic, salt/pepper, and dried oregano. Put the dressing on everything while the potatoes are still hot. I usually chill it for a while, but you can eat it right away.

People like it. It holds up for a while. It can be served cold or at room temp.
I have a German potato salad recipe that I reserve just for outdoor picnics. It has no mayo, and tastes wonderful at room temperature, and the vinegar acts as a temporary preservative since you can't be too careful. I am sure if you google 'safe picnic foods' you will find lots of ideas.

Here's an easy one even though it is past when you needed.

    2 can Bush's Baked Beans
    1/2 large onion cut up
5 slices pre-cooked bacon cut up in pieces
1/4 cup brown sugar or less depending on how sweet you like.
Mix together - bake at 350 degrees until onions are a little tender, about 50 minutes or less.
    Done.

I haven't tried this yet but Rachael Ray says that vegan mayo taste great and you don't have to worry about it spoiling. That alone is a good reason to try it. I'll never give up my Kraft Salad Dressing but sometimes you need something like this.
