Default recipes with "odd" ingredients

Looking for above. Here is my "odd" ingredient recipe. It is really good and several have asked for ingredients
Took to quilt retreat and asked people to guess what it was. No one could guess but all said it was awesome.
Pork and beans bars/cake
1 16oz can pork and beans
1 8oz crushed pineapple (do not drain)
2 cups sugar
2 cups flour
2 tsp cinnamon
1/2 tsp salt (I don't use)
2 tsp baking soda
1 tsp baking powder
1 cup vegetable oil
4 eggs

preheat oven 350 spray or grease flour 9 x 13 pan
In a large bowl mash beans and pineapple Add remaining ingredients and mix well
Bake 45 to 55 min. Do not underbake done when tooth pick inserted in middle comes out clean
Cool completely
I frosted with whipped cream cheese frosting. Or make your own.

Certainly not a Weight Watcher cake! LOL

My Grandmother made this cake with Black Beans not the Pork and Beans. I still make it and my grandchildren love it.

The only odd ingredient recipe I can think of is what my family calls "Foam". We make it every thanksgiving. Each year one person is I charge of making it, and selecting the ingredients for it.

Foam-
1 small container whipped cream (freezer case)
1 small container sour cream
1 small container small curd cottage cheese
1 can of fruit (drained and chopped if needed)
1 small box regular jello ( any flavor that will work with selected fruit)

blend first three ingredients. Add fruit and stir in. Sprinkle dry jello over mixture and stir in. Set in the refrigerator for at least an hour. Serve.

(Mandarin orange slices with orange jello, lime jello with pineapple, berry pie filling with berry jello, lemon jello with lemon pie filling is DH favorite, etc.)

You started out pretty strong with pork and beans so you may have already won hahahah, my mom used to make brownies with sour kraut in them......I think I have the recipe I'll need to look for it.

I found the recipe actually I found one for sauerkraut cake (not brownies) and black eyed pea cake

The following recipies were copied from a well worn and used hand written 3x5 cards I am so glad my mom had such pretty writing it was pretty easy to read, except where the grease smudges are.


Sauerkraut cake 2 1/2 cups flour
1tsp baking powder
3/4 cup cocoa
1 stick oleo (margarine for you youngsters)
1 1/2 cups sugar
3 eggs
1/2 cup drained sauerkraut
1 cup milk (this is an older recipe late 60's probably regular milk)
1cup water


Combine dry, first 3, ingredients and set aside
Cream oleo and sugar, add eggs 1 at a time mixing well
Add sauerkraut
Add dry ingredients alternating with milk and water.
Bake in a large edged cookie sheet or jelly roll pan at 350 for 30 minutes till done
Sprinkle top with coconut (yes I know it's not a listed ingredient)
Drizzle with glaze. (Yes once again not listed my recipe card says glaze recipe on zucchini card, I can't find that card) the card goes on to read
This batter is very thin a real moist delicious cake. I like it better without the coconut.



Black eyed pea cake


1 1/2 cups cooking oil
2 1/4 cups sugar
3 egg
1 cup canned unseasoned black eyed peas drained and puréed
1 tsp salt
1 tsp baking powder
2 tsp cinnamon
1 tsp nutmeg
1tsp vanilla
3 cups flour
1 1/2 cups canned pears drained and chopped
1cup chopped pecans


Combine sugar, eggs and oil mix well add puréed peas and mix
Add dry ingredients, spices, and vanilla mix well
Fold in pears, and pecans


Pour into greased and floured bundt pan bake 350 degrees for 1 hour 20 minutes. Let cool in pan for 20 minutes before removing from pan.


Also good with chopped pineapple instead of pears.


Glaze is listed on zucchini card.....


Well hell this was apparently a popular glaze and I do not have that card.

There is a pie made with beans. Also a friend of a friend makes fudge with Velveeta cheese. I have tried some, I was underwhelmed. It tasted like fudge made with cheese.

Can't imagine the pork and beans bars, or the sauerkraut cake ... but I'll try (almost) anything once.

I have two recipe's with odd ingredients.

Fire & Ice Salsa
Watermelon - small cubes, de-seeded
1 (or 1/2) Habanera pepper - cleaned of seeds and finely chopped (suggest using latex gloves to do this!)
tablespoon of finely chopped Cilantro
Combine and chill. Serve like any salsa with chips.

The other I don't have the actual recipe, but I remember Mom making a "Mock" Apple Pie as a kid. It used potato chips, no apples. It might have had apple sauce though.

Oh ... another that I've enjoyed in Thai restaurants many times and have no clue how to make is a soup that is made from Coconut milk, lemon juice, mushrooms and green onions. Delish!!!
