Rhubarb Raspberry Dessert
Crust:
1 1/4 c. flour
1 tblsp. sugar
1/2 tsp. salt
1 tsp. baking powder
1/4 lb. butter
1 egg
3 c. finely cut rhubarb
1 3 oz pkg. raspberry flavored gelatin
Topping
1 c. sugar
1/2 c. flour
3 tblsp. butter
Mix first 6 ingredients together for crust and pat into a 9" square pan. Arrange fruit on crust and sprinkle dry gelatin over the fruit. Crumble the topping ingredients together and sprinkle the topping over the fruit. Bake at 350 until fruit is tender and topping is lightly browned, about 45 minutes. 9 to 12 servings.

I hope these recipes will help you. I'll look for some more. Sure wish I lived closer to you, I'd be happy to take some of the rhubarb.

You should freeze rhubarb in the amount of cups that you need to make the bars, cakes or breads.

karen, haha, compost for rhubarb ? Oh my, a shock to my system, because at the moment, I am sitting here with my coffee, and a slice of homeamde sourdough toast slathered generously with my homemade strawberry/rhubarb jam! SOOOO good. lol, thanks for the laughter, as it reminded me to take our our compost container to our bin out back this morning.. Gotta love living in the mountains here - so many berries to go pick ( especially huckleberries!), and rhubarb to cut each summer.. :thumbup:

Anybody have any good receipes for zucchini we have an abundance of very large ones about 14" long and 4" thick.

I am so jealous of y'all thAt have access to rubarb. all we have in Texas are peaches and Blackberries. I had a piece of strawberry/rubard pie in Alaska and I loved it. we can't even buy it in the store here,not even froze . I'm not sure I even mow how to spell it.
