There are a million recipes out there for French Dijon Mustard Vinaigrette, but I found one the other day that added a little bit of finely, minced mint to it just before serving. OMG! It took it to a whole other level!!!

My recipe changes all of the time. Here are the basic ingredients. I adjust them to taste.
Olive Oil
White wine, or apple peel vinegar
honey
finely minced onion
capers
lemon zest
lemon juice
salt
pepper
and now, mint!
The general ratios are about 40% sour elements to 60% good, olive oil. You can add other, finely chopped herbs s/a tarragon, thyme, chives, etc. It's up to you. Keep adjusting the ingredients until it tastes just right...not too tart, but still some zip in it.
