Baby shower coming up. Asked to bring 4 quiche, at least 1 vegan:no egg or dairy. Been researching online. And daughter cooks vegan. She said to practice, so we’ll be eating quiche this week.
In the move from California purging left pie pans behind. Decided to keep only my fave’s. So quiche won’t be pie shape. And double recipe fits 9x13” pan.
Any hints?
Filling: vegan thought mushroom and spinach. Standard: bacon and spinach.
vegan crust: daughter suggested slices of potato.

Not sure how you could change this into Vegan, but it is a delicious crust.

Suggestion ... Daughter wants vegan quiche. ... Daughter provides vegan recipe.
Instead of making quiche requiring slicing, perhaps make tarts/tartlettes for individual servings.
Pre-portioning would be dealt with and you won't have to worry, will it crumble as you slice? or flop apart when you serve? The smaller size would let those who want to try more than one flavour to do so. For the vegan option, a slice of potato would fit nicely into the bottom of a tin.
Yes, you may not have one of these pans, but it could be a good investment and well used for multi-purposes. After getting rid of so many pans with your move, time to treat yourself to the one of your desires!!

If you are going the tart route, you might be able to get away with muffin cups or the aluminum foil tart tins. I have silicon tart/muffin cups that release very easily for baked goods. I've never tried them for pie type crust or potato tho.

Dollar Tree has disposable, aluminum pie pans.
Hummm...vegan quiche...kind of an oxymoron...good challenge though. I like the potato crust idea. Regular pie crust would work if you use Crisco and no butter. Field Roast puts out a good, vegan, Italian sausage for a filling. Mushrooms would also be good. Sausage AND mushrooms would be great! Field Roast and Follow Your Heart put out good, vegan cheeses/chao. Look for them in the vegetable section. Let us know how it works out.

I forgot to add something...if you use tofu in your recipe, try adding a small amount of nutritional yeast (Nooch) to give the tofu a more cheesy taste. Not too much...you'll have to experiment with that. I'll look in my vegan cookbooks for you and see what I can find.

Daughter didn’t request this. She is a resource for information. I was asked by the committee hosting the baby shower.. There’s many women who are vegan and glucose free. I’m willing to serve where needed. Just have a learning curve to pull this off.
Daughter can’t attend.
