    Default Soft Cake

    Soft Cake
    Ingredients:
    3 eggs
    1 cup sugar
    1 1/2 cups milk
    1/3 cup oil
    2 1/2 cups flour
    1 tsp baking powder
    1 tsp vanilla
    Pinch of salt

    Preheat oven to 350 F and grease a round pan.

    Whisk eggs and sugar until pale and fluffy.

    Add milk, oil, and vanilla slowly.

    Mix flour, baking powder, and salt.

    Fold gently into batter until smooth.

    Pour evenly into pan.

    Bake 35 to 40 minutes until soft and set.
    Cool before slicing.

    @Onebyone ... Thanks for sharing your recipe.

    However ... I am confused, as to me, cake is "soft" ...
    ... so is there something different here, that I am missing?

    I posted this recipe mentioned in another post. I did make this recipe, and it has a very soft dense texture. Not cake like at all. Like soft biscotti.

    Re-titled as Soft Biscotti makes more sense ... than Soft Cake!

    Oh how diplomatic of them!!

    I was thinking later ... soft biscotti ... perhaps it's more like a coffee cake texture? and without the add-ins that we usually see with a coffee cake?
