Default What to serve with this ?

I make a delicious Crawfish Fettuccine (similar to Chicken Fettuccine) dish that I want to make for a dear couple who we only get to visit with a couple of times a year. DH & I are very simple people & when I make it for us I generally only fix a salad & "maybe" breadsticks. I need at least one type of veggie to go with it for them but can't even come up with anything that sounds like it would go. It needs to be pretty simple w/few ingredients. I'm thinking fried okra but not sure if they like okra (would have to ask). Any suggestions?

Your dish sounds delicious. I would keep the salad and bread-sticks. Will you also have dessert with the dinner?

If you still want a veggie...green beans or asparagus. You could also make a colorful medley of lightly sauteed carrots, zucchini and yellow squash. Sprinkle with parmesan cheese.

When in doubt, I try to make my meals colorful. Monochrome meals don't look interesting and usually lack nutritionally. A simple green salad and cooked or roasted carrots would be my suggestion.

We are on the same page, the sauteed vegetables would be great.

Thanks for the ideas. I like the thought of the sauteed carrots, zucchini & yellow squash along with a green salad & the bread sticks.

My first thought was also broccoli. Maybe with a few almond slices to be fancy.

I think a simple salad would be a good choice. Fettuccine is one of my favorites.
