I make a stirfry with cooked chicken. Some sliced potatoes, onions, & whatever vegetables I have on hand. Sometimes I throw in diced tomatoes & sometimes a bottled sauce.

Make a sandwich spread or just a chicken sandwich with mayo and lettuce along with sliced chicken on bread.

How about Chicken Pot Pie? Buy the pie Shells ready made. 1 can of Cream of Chicken Soup. Frozen Veggies--your choice.
Line the pan with the pie shell. Mix the Cr. Chicken Soup, Frozen Veggies, 1-2 potatoes--your choice how much potato you want. Salt and Pepper.
Top with the other pie shell, slits cut in top for vent. Bake 375--45-60 min. Delicious, quick and easy and economical!! Enjoy!! Mariah

I would make a small recipe of Chicken Alfredo Fettuccini (or other pasta). One breast should be plenty for 2 people. You can Google for Alfredo sauce if you don't have a fave recipe.
