Over cooked Chicken?
I did it again.
I overcooked boneless, skinless chicken breasts............do you have a recipe or something I can do with the pieces that are overcooked to save them from going into the trash? {other than tossing them out for the feral cats]
I even wrapped them in bacon . . . . I just cooked them too long, Again! [Yes, I get distracted.}

I like to brine them overnight. Cook in oven with a little olive oil on 425°. Take their temperature and take out of the oven when they hit 180-185°. (5° below the poultry setting on the thermometer) Temperature is more important than time.
You could shred it finely, add BBQ sauce and make sandwiches.

Chicken breast cut into pieces, mixed with celery bits and mixed with Miracle Whip or mayonnaise makes great chicken salad sandwiches. Shread the chicken and heat with a can of cream soup and serve over egg noodles.

Just dry. I like my chicken undercooked by some standards. Never bloody, just a hint of pink.
I took them out at 145* but they are just barely over cooked.
Soaking in enchilada sauce sounds good.......I,ve made chicken salad before so I will try enchiladas this time.

I make chicken and dumplings or chicken pot pie with not so great baked chicken. I always use a food thermometer for all my cooking, especially breads. This is the best one I have used. http://www.thermoworks.com/Classic-Thermapen. It makes a great wedding present.
