I did 9 craft fairs last year.
The little fabric boxes sell fairly well for me, as do potholders, placemats, and quilts. Eye-catching, colorful, modern throw-sized quilts sell faster than the more traditional bed-sized quilts, at least in my experience so far. Most people just see the price, and not the quality or labor involved.
Quilted cell phone cases and Christmas ornaments sold "okay".
Tissue holders didn't sell worth a hoot for me, and naturally I made about a gazillion of them. LOL!
My best seller is handmade earrings for $1 a pair. I used to sell beads and jewelry-making supplies on eBay, and had bunches of inventory left.

Covers for e-readers, glasses cases. I once made some little mice from a scrap of gray sweatshirt fabric and added leather thong tails, stuffing them with fiberfill and a little catnip. A lady bought one and then returned the next day and bought all I had saying her kitty played all night with the first one she bought. You just never know what will sell. Goofy monster bibs or denim bibs trimmed with hanky fabric are usually good sellers too.
