Dish drying mat - what to use for the absorbent?

I've been watching some YouTube sewing videos and saw one where they cover a Dollar Store dish drying mat with 2-1/2" strips to make it look much cheerier. A great idea, and then I was wondering what to use for the middle if you wanted to make your own. I just threw two of mine away and never thought of making my own! duh!
One video used old towels, one used car drying towels, one used very thick (size 06 maybe?) batting, but I was wondering if you have made one and used something else, what did you use that worked?
Lately it seems like I enjoy more quick, useful projects than more laborious ones, and these are very useful!

I would think about buying a couple from Dollar Tree or Wallmart and then adding jellyroll strips or such to the top by making it a bit biggeer than the mat, right sides together and sew aroung the edges leaving a partial side open for turning. Top stitch or whip stitch closed.

I buy up the dish drying mats when Hobby Lobby clears out Christmas inventory. I don't care that they are all red or green since I am going to cover them up with fabric ! The last batch I purchased were 90% off and I paid around 50 cents a piece for much better quality than those at dollar stores.
