    Nuke until soft. Also finely dice some onion and garlic, cover and nuke for about a minute. Scoop and mash the sweet potato with the onion, garlic, some salt and pepper, and a dab of sour cream. Put in a greased casserole and top with buttered bread crumbs (or cheat and use crushed croutons) and bake.

    Slice them in half length-ways, brush with tops and skin sides with olive oil, season with salt and pepper and bake on sheet pan at 450 degrees until the edges are charred. They look fancy and taste great.

    My favorite way to fix sweet potatoes, is to toss with olive oil, salt and a bit of cayenne then roast for 20 minutes at 450. Quick and easy

    I also have a sweet potato casserole recipe that I do in the crock pot. It uses apple and honey to sweet. Yummy!

    I love sweet potatoes. We have them often. With Easter coming I'll make sweet potato casserole, with pineapple slices and juice, butter and brown sugar added, then topped with marshmallows at the end. Funny side story...my grandsons, 22 and 18, don't like sweet potatoes, but they love the sauce. So now, when I make the casserole, I make a separate smaller one with just pineapple juice, butter, brown sugar and lots of marshmallows. It's so gooey and messy, but they love it!

    I boil them in chunks, mash when ready, and put on top of shepherds pie instead of white potatoes. Excellent!

    I make an old fashioned sweet potato casserole. 4 medium sweet potatoes, 1/2 cup brown sugar, 3/4 tsp. kosher salt (may drop to 1/2 tsp.), 1/4 tsp. cinnamon, 1/8 tsp. ground cloves, 7 Tbsp. butter, cut in 1" cubes. Preheat oven to 350 degrees. Peel & shred sweet potatoes, then spread in a 10 x 7" baking dish. Mix together brown sugar, salt, cinnamon & cloves and spread over the shredded sweet potatoes. Dot with the cubes of butter. Bake 45 minutes, remove from oven, stir, then top with 1 cup miniature marshmallows and return to oven and bake 5 minutes more or until marshmallows are puffed up and slightly brown. Remove from oven and let cool a bit before serving.

    Plain and simple for us! Roasted either whole or diced and tossed with a bit of olive oil.

    The ones in the grocery here are absolutely huge. If I bake whole ones, we split it between the two of us.

    Soak raisins in brandy for several hours. Slice sweet potatoes into disks and layer in buttered dish. Pour raisins and brandy over the potatoes and roast. More butter can be added on top.

    I have placed them in a electric pressure cooker (or insta pot) and steam them. Microwave is the fastest way though

    I recently found and tried a recipe using the slow cooker. Sweet potatoes (or yams) sliced and layered in the slow cooker. Make a mix of melted butter, honey or maple syrup, and cinnamon. Pour over the potatoes and cook on high for 4 hours. Wow! I'll do that again.
