For just me, I nuke 'em good! Takes less time for sweet potatoes than regular, so maybe 6 minutes total?? Again, super simple, slice in half, scoop out the insides if you want, and otherwise butter and salt and pepper.
I have tons of recipes too. I personally liked the yams with the marshmallows but the rest of my family did not... One easy dish that went over pretty well at the holidays was to peel and slice into basically steak fry slices, put in a baking dish with sides and pour some pineapple juice over the slices and bake "until done".

I wrap them individually in foil, making sure the seams are tight. Place onto a pie plate in case there is any seepage and bake at 350 for at least an hour and 15 min., depending on size. The last 15 minutes or so, they seem to bake faster and go from hard to done.They come out moist and super soft, which is how we like them. Serve with butter and brown sugar. Mmmmmm.

I love sweet potatoes too. My two favorite "fixes" after baked and buttered are below.
Peal, slice into one inch cubes. Toss in a little olive oil and roast in a covered fry pan. About 10 minutes will be ready to eat. Top with a little feta cheese and a light dust of cinnamon if desired. Ta-Da a yummy side that is healthy and tasty.
Some times I will peal and slice thin, (1/4 to 1/8 inch thick) toss in a fry pan lightly coated with olive oil and create sweet potato "chips" or discs. They cook quickly and in a blink will be too brown because of the natural sugar in the orange spuds, so watch carefully and turn once.

I'd never ate sweet potatoes until I moved to Iowa and my sister introduced them to me. I use them like I do my baked potatoes, lathered in butter, some sort of meat, loaded with shredded cheese, nuked until the cheese is bubbly, then add sour cream and chopped green onions. I've never cared for sweet potato casserole where you add marshmellows, that just masked the potato to me plus I'm not much on sweet things anyway. I'll also throw in some sweet potatoes when I make my butternut squash soup as I add a lot of various veggies from the freezer to use them up, all mostly from the garden season.
