Mopec, placemats are a great way to use up scraps and orphan blocks and when you're donating to something like Meals on Wheels, it's okay if you don't have an entire set that are the same size, shape, or pattern. My stash sometimes comes up with smaller pieces of fabric that just don't fit in with many others and so I try to find them a friend or two and make placemats out of those, and it sounds like that might be something you could do with your group's fabric stash. There are tons of pattern ideas online, but it's also easy enough to make it up as you go along (my usual method) - see photos. As a bonus, it's a great way to try out new techniques or do a practice block for a bigger project.

Walker bags I make are simple rectangle bags with velcro straps. Same with wheelchair bags but not as long more squat looking. The placemats are any color and any design. Ask the facility if they will use them. They have to be part of the laundry. Most assisted living facilities love to have them.
