    I have an old WWer recipe that calls for one package Angel Food cake mixed with one can of Lemon Pie Filling. Mix well, bake in 9x13 pan, sprinkle powdered sugar on top and enjoy....I think the baking time and temp are the same as for an Angel Food cake......

    You can mix lemon curd with a block o cream cheese and use it as a dip for ginger cookies! It is yummy.

    I made these once for Quilt Guild meeting, and the ladies oohed and aahed...a fun mix of flavors! Of course the recipe only makes two servings so you have to adjust for more servings!

    Gingersnap Pear Trifles

    ½ cup heavy whipping cream
    ¼ cup lemon curd
    ½ cup crushed gingersnap cookies
    1 cup chopped canned pears
    2 Tbsp. chopped crystallized ginger

    In a bowl, beat cream until soft peaks form. Fold in lemon curd.
    Layer half the crumbled cookies, pears and whipped cream in two dessert dishes. Repeat layers. Sprinkle with ginger. Serve immediately

    (Crystallized ginger adds both sweetness and spice to this simple trifle.)

    Thanks for the recipes, I want to try both. Although I can eat lemon curd by the spoonful. If anyone wants a super easy recipe for lemon curd check out Ina Garten's it is wonderful.

    Well, I'm glad I'm not the only one who might just eat it with a spoon! I love that stuff, and it's even better spread on top of cream cheese.
