My recipe is just a little different. I always use butter. Much better for you and tastes better. I always use cocoa. Much better for you.

1 lb. Velveeta cheese (room temperature)
1 lb. salt-free butter (room temperature)
    4 lb. powdered sugar (14 c.)
    1 cup cocoa
    1 T. vanilla
    1 c. broken nuts (optional)

Sift cocoa and sugar together into large bowl. Melt cheese and butter together over low heat, stirring almost constantly. Stir cocoa mixture into cheese mixture. Add vanilla and nuts (if using). Mix well and spread into well-buttered 10x15 pan. Chill and cut into squares.
(When making this for our church cookie walk each December, I put the fudge into the pan without nuts in it. After it is spread out, I mark the pieces with a knife tip. Small pieces. Then I press a pecan half or quarter into each piece. After it is set, I cut the pieces as marked. Sells well.)

Good think Velveeta doesn't spoil. Whenever you go to a pot luck, think Velveeta.

Use in anything that is good with melted cheese in it. But adjust your salt. It is VERY salty. I rarely buy Velveeta anymore because it is so processed and so salty, but it sure makes some yummy, cheesy foods.

For holiday meals I am always asked to bring corn casserole. It makes a lot, has velveeta in it and everyone loves it. http://www.foodnetwork.com/recipes/p...e-recipe.html#!

my favorite, when i was little, was mom's baking powder drop biscuit recipe: when she'd "drop" the dough on the pan, she'd tuck a cube of velveeta in the middle, and then bake them. melty cheese, hot biscuits! the kids loved a "'quick dip" that was a can of chili with no beans, and velveeta melted into it. (no rotel in this one!) it was great over a plate of tortilla chips, and if the wanted to make it big time, they'd sprinkle chopped lettuce, chopped fresh tomatoes, and chopped cilantro on top when they served it up.

This makes a large casserole. I've been asked for the recipe many times.

    CHICKEN MACARONI HOTDISH
Simmer 1 whole chicken covered with water and 1 tsp. salt, onion and celery until done. Remove chicken, save broth. Let cool enough to debone. Cut meat in bite size pieces.
Make cream sauce 3 Tblsp. butter, 3 Tblsp. AP flour, 1 cup evaporated milk (or light cream), 2.5 cups chicken broth. Cook on med. heat until slightly thickened, add 2 cups cubed Velveeta and stir until smooth. Add 1 (or 2) cans Cream of Chicken soup.
Cook 2# box elbow macaroni until not quite done. Drain. Mix chicken, sauce and macaroni in large bowl. Add minced onion to taste, pimento and black pepper. Salt lightly. Put in oven dish and bake when convenient.

This is in my "will try someday" file.

    CHEESEY CROCKPOT CHICKEN and SPAGHETTI
Cook 16 oz. pkg spaghetti, drain and set aside.
    Spray crockpot or use liner.
Mix together in crockpot: 1# Velveeta cheese cubes, 2 cups cooked chicken, 1 can cream of mushroom soup, 1 can cream of chicken soup, 1 can Rotel tomatoes with chilis, sliced mushrooms, 1/2 cup water, diced onion, black pepper. Cook on low for 2-3 hours. Stir in spaghetti last 30 minutes.

You sound exactly like my husband. When he goes to the grocery, never know what he's going to come home with or how many items. Last time there was a 10 for $10 deal on canned beans. I have 20 cans of beans. He was very proud of himself, I hadn't the heart to tell him the price was still a dollar if he bought 2 cans of beans. Sounds like lots of great recipes, I am going to have to purchase some Velveeta.
