    Cranberry Orange Biscotti
    1 & 1/2 c flour
    1/2 c cornmeal
    1/2 c sugar
    2 eggs
    1/2 tsp salt
    2/4 tsp baking powder
    1 tbsp orange marmalade
    1/3 c dried cranberries

    heat oven to 325
    beat sugar and eggs until pale yollow and light. beat in remaining ingredients. let stand 5 minutes. spray a cookie sheet. shape dough into a log about 4inchs wide and 18 inch long. bake 1/2 hour. cool 5 minutes. cut into slices 1/2"thick then cut down the center. you can eat them at this point as a soft cookie or re bake for biscotti. to re bake put cookies on the cookie sheet. bake 15 minutes turn and bake 15 minutes longer. store in air tight container. they will last forever. it should make 34 mini biscotti at 40 cal each.

    Mocha Pannacotta
    1 envelope knoxx gelatin
    1/4 c boiling water
    2 c hot coffee
    2 envelopes instant hot cocoa mix

    put boiling water in a cup. sprinkle gelatine on the top, let sit 3 minutes. put coffee in a large measuring cup. add cocoa mix and gelatin. mix and pour into 4 dessert cups, chill. there will be a layer of chocolately goodness on the bottom. 45 calories per serving

    Instead of bread, I am now making all my sandwiches with romaine lettuce leafs. No more bread for me; I am convinced it stymies my weight loss. This should make for a good weight loss in February :)

    Have you tried the bread rounds? They make delicious sandwiches and are very thin and taste delicious!

    Carrot Cupcakes
    1 c boxed yellow cake mix
    1 4oz jar baby carrots
    1 6-7" carrot grated
    1/4 tsp cinnamon
    1/8 tsp ground cloves

    heat oven to 400. spray 12 c mini muffin pan with cooking spray. mix all the ingredients in a bowl. divide into 12 mini muffin cups. bake 20 minutes
    45 calories per muffin

    Cream Cheese Frosting
    1 oz cream cheese room temp
    1/4 c yocheese or greek yogurt
    1/4 tsp vanilla
    1 tbsp powdered sugar.
    mix it all together frost mini cupcakes add 15 calories for frosting per mini cake.

    Country Apple Custard
    1 c fat free milk
    1 egg
    1/2 c applesauce
    1/2 tsp cinnamon

    heat oven to 350. wisk all the ingredients together. pour into 3 custard/pudding cups. bake 40 minutes until set. cool. 75 calories per serving
