Pennyhal, some people always press to one side, some always press open, and lots of us do whatever is appropriate for the project. I press open a lot of the time because I think I get a flatter finished block, especially if there are lots of seams.

I try to press flat first, then to one side, AND THEN TO THE OTHER SIDE. Then both seam allowances already have the crease in them and will lie flat very quickly.
This is especially important when turning something inside out. It is easy to get a sharp edge if both seam allowances have been pressed away from the seam line before you turn it.

This is great. I am in the midst of putting together a One Block Wonder and seams are pressed open. I have been finger pressing and then burning fingers at the iron anyway. This will go into practice today. Thanks so Much!!!
