Prisim, you sound like me!
It's hard to make a string/scrappy quilt without wanting to organize it in some way. This is the only one I've made so far. Decided to use black as the middle strip. Then, I just had the strips cut in various lengths and widths and started sewing. The only thing I tried to make sure of was to not have the same colors back to back. It was hard to not "design" it. HA, HA.

my quilt mentor made many string quilts and one I particularly liked had a large triangle as 1/2 the block and then strings as the other half--brought in more of a consistency while still using lots of strings.
Right now I'm using strings to make large tote bags for foster care kids--sewing directly onto the bat (QAYG method), attaching handles on the outside, then doing the side seams and inserting the liner, which has pockets. Go quickly and give you a large bag (20x22)

Gosh, I go out and buy fabric for my scrappy quilts. Sort of defeats the purpose. Oh well.
I iron vilene if it is all wrinkly and doesn't lay flat. You just have to not use heat. I turn my iron on for about 5 seconds. I iron the ironing board so I can judge the heat without touching the iron! If it is barely warm, I iron the vilene.
