    There's two of us so most of what I make is either two servings or four.

    This is a casserole I often make from cooked leftover chicken.

    Mix together and put in a casserole:
    Chop up 1 chicken breast
    Add 1 cup bread stuffing...I use the box kind and it doesn't seem to matter what seasonings it is
    Finely chop 1/4 cup onion
    Finely chop 1/4 celery
    1/2 cup shredded cheese ( I like cheddar, but swiss is good too, or any kind you like)
    Add enough mayonaise to moisten...I use the Low Fat 15 calories/tablespoon kind

    Bake at 350 degrees until hot, usually about 20-30 minutes. Good reheated. Can also be served cold.

    I like to heat up a jar of Paul Newman's Sockarooni (?) or the marinara spaghetti sauce and pour it over the cooked breast. Sometimes I chop the chicken and add it to the sauce. Eat over any kind of pasta or over a baked potato.

    Hi GailG, I've never heard of the Sockarooni but will be on the look out for it. Today is grocery shopping day. That sounds good. I'll try it and let you know how I liked it. Thanks for the info. Lynn
