    Thanks I will try the recipe very soon. Tonight we had corn beef, carrots, potatoes, and cabbage. St. Patrick's Day meal one day early because all the kids and grands came to supper.

    Last night, we had boneless thighs that needed to be cooked. So, I browned them on both sides in the iron skillet, then added cream of mushroom soup, mushrooms, and sun-dried tomatoes. Baked at 350 for 15 minutes. Meanwhile, I microwaved corn on the cob.

    Turkey (left over from Christmas) with gravy and veggies. I have some left over dressing and found a recipe for a Keto dressing for the DH. Hope he likes it because it sure would be nice to have a go-to for him at holiday time.

    Saturday was pork chops in air fryer and sides. Last night was burrito bowl in Instant pot and tonight is meat loaf, baked potatoes and green beans.

    Fried Fish!
    I cut up Mahi filets into 1 inch cubes. It is a very firm fish. Battered them in egg/milk and Progresso Bread Crumbs and fried as usual. Then I heated up Pineapple Habanero Sauce from HEB in a large bowl and tossed the cooked fish cubes in sauce. I got the idea from doing the same with their coconut shrimp appetizers.

    Marinated chicken. I put the marinade and raw chicken in foodsaver bags, sealed and froze them. First time I've tried this. We shall see if it was a good idea or never to be repeated.

    your recipes all sound so good!! I had a single-gal supper, bowl of cheerios with banana and almond milk. Then a little ice cream.

    Just made chicken breasts started in cast iron skillet and finished in hot oven. Flavorings of choice. Also Parmesan polenta. Easy and delicious

    Yesterday, Crock Pot Stew. I use the packet of McCormick's Stew Seasoning and 3 cups of water. Cut up a roast into cubes and browned. Hour later, vegetables. The wind gusts outside were insane all afternoon!

    Tonight, Chile Rellenos Casserole. New recipe. Results to follow!
