We always have a ham, scalloped potatoes and several cold salads and rolls. These are all things that can be made ahead.

I am starting a new tradition for Easter this year. I am going to spend the entire day playing on my sewing machine and everyone can make what they want. They never want what I make anyway!LOL

We are going to have a leg of lamp and a salad nicoise. The salad is really nice because you use fresh green beans, new potatoes and a nice fresh herb vinegrette- it traditionally is also made with olives and tuna. If the leg of lamb is too expensive, how about tuna and noodles or macaroni and cheese? My kids go nuts over either one of those casseroles. I think the chef salad is a great idea to go with either or both!

That is a great idea. I love to make hamburger gravy to go over the top of the potato, too!

The kids are usually all with their dad for Easter, so DH and I usually go out to a buffet somewhere. No reason to cook a big holiday meal for 2 people.

We are having Ham and Roast Pork, scallop potatoes, mashed potatoes gravy, baked pineapple applesauce corn and lima beans, brocill,with chesse,green salda rolls and devil eggs stuff celery,and for desert lemonpie, choc cake, strawbery cheese cake and are Easter Baskets.
