    Leftover meatloaf, my favorite, then a recipe that steams a cauliflower (I use the instant pot) and then put it into the food processor with, in our case, turmeric, butter, salt, pepper and whiz it around til it is smooth. This isn't a substitute for mashed potatoes. It looks the same but tastes and feels different and I love it. I could slurp the whole bowl down. And a vegetable to be determined. PS I also make mashed potatoes from scratch and I love those too. But this is different.

    I mash steamed cauliflower with butter and we love it. Same texture as mashed potatoes. I also do turnips the same way but boil them. It's getting hard to find turnips in the last few years.

    All of this sounds good and making me hungry. Time for breakfast. Leftovers-yea.

    Cut up sweet potato and a pablano pepper, 1/2 pkg tofu. Add something fermented (kraut, KimChi, jalepeno, etc). Then a slurry of miso, olive oil, apple cider vinegar, salt and coriander. Microwave until potato is soft. Makes 3 meals. I added a can of beans and 1 cup couscous for the second and third meals.

    I'm enjoying my vegetable garden. While watering, I noticed the romaine was beginning to bolt. So dinner was romaine lettuce, dill, parsley, green onion from garden. Added potato and seasonings.

    The green beans and tomatoes are loaded with blossoms so a couple weeks. There's banana chili peppers. Maybe tomorrow.

    We are in the PNW for the weekend so son grilled fresh salmon and we had crash potatoes and Caesar salad.
