    Last night we had the rest of the salisbury steak, this time with noodles instead of the mashed potatoes, and green beans instead of the peas. It was yum. I am defrosting chicken breasts for tonight and will be thinking of how to cook them.

    I haven't cooked anything is six days. My husband asked if we were having potluck again tonight. I said if there is any left to have. I've been busy with flowerbeds and sewing.

    I put sweet potatoes in to bake. They are pretty big, so will take a while. The grocery store had a really good meat sale this week so I splurged on steak for supper tonight. It will be nice for a change as we don't have it very often.

    I'm doing a flatbread with roasted veggies and maybe a bowl of soup, or chili. I roasted the veggies the other day and made a couple of sandwiches with them, but I still have some left over.

    Tonight I'm making chicken thighs with capers, calamari olives, lemons started stove top finished in oven then sauce with a little white wine and broth and a shallot. With rice and roasted peppers. Have made before and it is delish

    We don't have any family plans for today. Usually on Sunday we have our "date" day. We go bowling and then usually follow it up with an unwich/lettuce wrap at Jimmy John's. Today the bowling alley is closed for Easter.

    Yesterday we did do some shopping, first to (one) of the local butcher shops -- we have 2 large local shops within a couple miles of the house. Anyway, we went to get some of the smoked pork chops and ended up getting a couple other things -- some fancy pre-made burger patties and bacon. Then we went to Kroger for "soda and red french salad dressing" and found a sale on Rib Eye steaks if you spent $25... we were already up to that so in went a large package of steaks. We had the pork chops yesterday.

    So for tonight, we grill!

    We are preparing cabrito for this afternoon. I have roasted a leg before with French Onion soup, and it was delicious. Might try something new. Yesterday, made amazing shrimp gumbo using Zatarain's box mix!

    Baked salmon patties with guacamole and salad. I found a recipe that can be keto-ized. I par cook the salmon, flake and divide so that DH's are made with almond flour and mine are made with bread crumbs. If you have never had guacamole with fish, please give it a try. We love it! Plus, I have learned to make it from scratch so I can customize the heat level.

    We had fried salmon last week. I get Ground Lupine, first found it at Costco and now buy direct. As a breading, it has a cornmeal type texture. Not a lot of flavor, but very keto friendly. So did a simple egg/milk wash, seasoned the ground lupine with some Italian Spice Mix and Lemon Pepper, comes out nice and crisp and a different texture than we usually have.

    I usually "oil poach" fish. Basically use quite a lot of oil (olive for me, for flavor), but do not have the heat high. Cook gently Here's a Martha Stewart link if it is a new technique.

    We have guacamole on hand pretty much all the time and have pretty much eaten it with everything -- here's a good keto tip, when you eat guacamole with your pork rinds, together they fill in each others lacks to make a more complete protein.

    Have not tried avocado with fish, but I do make an appetizer tray with boiled shrimp. Club cracker, guacamole, peeled shrimp, topped with Cholula sauce. Mmmmm.
    I fix it like a "build your own cracker bite" tray for taking to parties.
