Easy Peanut Butter Cookies (And so good)

1 cup peanut butter
1 cup sugar
1 egg
Mix together. Form into balls, Place on cookie sheet, Press down with a fork. Bake at 350 until done.
These are so good.

This has been my 'go to' recipe for my DIL who is a celaic. But now, her son has been diagnosed with a nut allergy, so this is no longer an option. I've yet to make them with soy butter but if there is anyone out there who has, please let us know what they taste like.
But they are indeed yummy and yes, no flour.

Yes, no flour. I have made these for years. My Dad loved peanut butter cookies. Was so thrilled when I found this recipe, so much easier than the old recipe. You have to try them.

I make these about once a week. I them with about 3 handfuls of chocolate chips. They are good for anyone who has to stay gluten free like me.

I eat soy butter on my toast all the time and can't tell the difference from peanut butter. It has the same taste and consistency, so I would think it should be ok in the cookies.
