Default Need a recipe for pecan pralines

I have been trying to get this request on the forum for a week. We bought pecans during a recent visit to Texas (15 lbs, if I remember correctly) and I am wanting to make some pecan pralines. The GS googled some recipes for me while we were at his home (they are recent newlyweds, so no decent recipe books in their stuff) and I did not like the sound of any of them. I have in mind certain ingredients that should be in them, but not the ratio. Can any of you help me?

I am remembering from making them in the past, brown sugar, butter, halfnhalf or evaporated milk, vanilla. All my favorite recipe books are stored away right now from a kitchen re-do we did last year, and I simply am not up to the hunt.....

I have a lot of them but the one I use most is this one. 3/4 cups each brown and white sugar. 1/2 cup evaporated milk. 1 tbs. butter 1/4tsp vanilla and 1 cup pecan halves. Combine sugars, milk and butter in sauce pan bringing to a boil. Lower heat and cooking to soft ball stage. Remove from heat and beat until creamy, add pecans and vanilla. Drop by spoonfuls on a buttered dish.

Thanks sweet and crafty pat. I am going to print these off, then get started on DH to pick me out some pecans. The Emeril LaGasse one sounds wonderful. I used to love him on TV, but don't do much TV watching anymore. Is he even still on?

Louisiana creole pralines
2 c. Sugar
1 c. Brown sugar packed
1 c.. Milk (creamier with evaporated milk)

1 stick butter
2 tbsp.. White Karo syrup
4 c. Pecans
Put all ingredients except pecans in 3qt. Saucepan and cook for about 20 mins. After boiling starts, stir occasionally. Add pecans and cook until a soft ball forms when dropped in cold water. Drop by spoonful's onto waxed paper.

I haven't made these but the recipe comes from a good cook.

Here is a recipe that I have used many times - it is wonderful!

Doris's Praline's

4 cups sugar
4 Tbs white corn syrup
1 can sweetened condensed milk
1 can water
1 tsp vanilla
5 cups pecans
1 Tbs butter

1. Mix all ingredients except butter, vanilla and pecans. Cook on low heat until mixture forms a soft ball in cold water. Remove from heat. Add butter, vanilla, and pecans, and beat until mixture holds its shape. Spoon onto buttered wax paper (add old newspaper under the wax paper). If candy gets hard before all is spooned out, add a little water, and heat again. Or you can let is stand on low heat while spooning out.
